when i put my PS2 games into my ps3 and start to play them, the screen goes fuzzy and my controller turns off and the game is played in 4:3 mode and I cant change it back.

The exact same thing happens to me
I'm not sure how you change it back I think it's just the PS3 having trouble with PS2 emultion so it restarts when disc is enters. Fimware updates should hopefully fix it.

I haven't had any trouble playing my PS2 games at all. I've been playing Metal Gear Solid 3 this weekend without a problem. Make sure that your PS3 is updated and make sure to keep it updated because, a few of the past updates for the PS3 resolved minor issues in playing various PS1 and PS2 games.

If you have the 80 GB PS3 then your system isn't as compatible with the majority of PS2 games because the emotion engine was taken out of the system. The 20 and 60GB PS3's are compatible with the majority of PS2 games, but not all of them. On the playstation website you can check and see what games are compatible with the PS3.

you need an emulator to run ps2 games, i think you can get it for free at their site
