Chicken, penne, baby summer squash,eggplant, fresh picked tomato and basil in olive oil and garlic with a roasted beet salad over mixed baby greens with persian cucumbers, tomatos, avocado-WHY?

I think just something simple like beans on toast, we are a bit skint at the moment lol....can't afford to buy meat.
