Okay i'm down to 2 different granites. Absolute black - pretty shiny black. Or and I'm not sure of the name of this one its a blackish-grey with tan and bluish grey specks in it.

Right now appliances are white but at some point I would like to get stainless. Probably not until I get my taxes back though. Walls will possibly be dapper tan. I'm not comitted to any color yet. I did think about a sage or celery green also if I go with the black. I am so undecided.
I love them both.

cabinets are a reddish honey oak.

If you're pretty sure that you'll be able to get the stainless appliances in the near future, then I'd say go with the absolute black granite for sure.....combined with your dapper tan walls, this will give you a look that is rich, classy and easy to change up with accent pieces. I don't know what your kitchen floor plan looks like, but sage or celery green walls would be nice as long as the color tone isn't too dark, and your kitchen is large enough to handle color. Sounds like your kitchen is going to be gorgeous!

I think you will be happier with the granite with a few flecks in it if not just because of finger prints. My new kitchen has cherry cabinets and floors with black/flecked granite tops. My appliances are stainless and the kitchen will be painted in a sage green, the same as my previous house. It was beautiful.
