Definitely a white as it is pork. Depends on your taste buds, personally i find the lambrini/lambrusco too sweet so would go for perhaps a semillon or verdellho which are usually quite mild and crisp on the palate.

either Lambrusco or Lambrini - both are suitable for Spam Fritters. Not suitable for anything else though!!

With the high fat content of the meal, I would go for a Grenache based wine as it has a high alcoholic content and should wipe the fat from your palate.
