EVERYONE says flour, eggs and water. Bah! Western noodles are high in cholesterol because of eggs. Let me share my recipe for sticky Chinese noodles--the kind that you can get from ramen shops and Chinese restaurants. Eggs are optional.

Ingredients:

1 cup rice flour (NOT the same as glutinous rice flour) or cornstarch
1 cup wheat flour
freshly boiled water
salt (optional)
3 tbsp oil (optional)

Mix the two flours and slowly pour hot water over them. Knead until the dough turns sticky and stretchy. The dough is very different from pasta, because it will be sticky, stretchy and bouncy. To prepare the noodles, either cut them or stretch them out.

These Chinese noodles are sticky and bouncy when boiled. Serve it with a good broth or consomme.

1 cup flour
1 egg
1/2 egg shell of milk


Note: this makes a small batch -double the recipe if making a large pot - or tripple if a crowd. the milk makes the noodles so tender they melt in your mouth.
Place flour in a small bowl, making a dent in the center. Carefully the crack egg shell- put egg in the center of the flour. Use 1/2 of the egg shell you just cracked, fill it with milk and stir into the flour and egg mixture using a fork. Dough needs to be slightly sticky and form a ball, so if needed, add just a touch more milk until the right consistency.

On a well floured bread board or surface, carefully roll out the dough until very, very thin (almost paper thin). Dough will be stretchy and very tender. Using a Pizza cutter, cut the dough into thin noodles -length of your choice. It is okay if the noodles are not perfect and it is not necessary to dry the noodles.

The best noodles you ever had you get with this recipe,
1 kg all purpose flour, 30 egg yolks, (with the whites you can make a merinque for desert), table spoon olive oil and a pinch of salt.

You will find it hard to knead at first but don't add water, ask your neighbour to take over for a while, once you have a smooth texture let it rest for an hour or so then make your noodles, really the best ever

Here I'll go one better and give the recipe for my grandma's home made noodles. Granted these are the type that you would use in home made chicken noodle soup.

3 cups Flour
6 Eggs
1/4 Cup Water
Salt to taste

Mix flour, eggs water and salt in a large bowl

Place on a well floured surface knead for about 1 minute

Divide the flour into golf ball sized balls of dough.

Roll out each individual ball of dough, layer with flour in between each layer. Roll up into a tube shape slice the roll into thin strips. Separate, add to rapidly boiling water. Boil until the noodles are tender. This is a wonderful recipe for egg noodles. I add mine to home made chicken stock and than add diced chicken. This is my grandmothers recipe and now I have shared it with you. I hope you enjoy this 80 year old recipe as much as our family has.

I wouldn't use the jalapenos. It's not typical for a spaghetti sauce and to me, doesn't sound good together, although it won't be too bad, I guess.. could be used instead of a green bell pepper. First, you have spicy hot links, and this will provide you with a decent amount of heat. If you have red pepper flakes, the kind you put on pizza, this is where you get spice from typically in Italian cooking. Just saute an onion, garlic, and celery in olive oil with about 1 tsp chili flakes. Add the beef and hot links, cook for about 8 minutes, then add the sauce. I would add dried oregano if you have it, salt, pepper and a pinch of white sugar.

Eggs and flour. No water. A pinch of salt, if you want.

Mix flour into the eggs until the consistency is doughy. Work it with your hands until it is even throughout. Now roll it think, and cut it into thin strips. Leave the cut doughy noodles out to dry. (You could cook them as is, but it'll take longer). Once they're dry, boil them as normal.

They'll taste much richer than store bought noodles.

u can cook noodles in boiled water for some time. put little may be 2/3 drops of cooking oil in it, so noodles will be separate. cut vegetables like carrot, potato, capsicon, onion etc. cook carrot, capsicon, potato to make it soft. add oil in pan and put masala with all ingredients and noodles in it. stir well and remove and eat with sauce
