Easiest Stay Soft Chocolate Chip Cookies
These are so easy and soft and fluffy. I was searching for the perfect recipe that stayed soft and fluffy. I never liked the tollhouse recipe. They were never fluffy enough. I often make them without chocolate chips and roll them in sprinkles for myself. These travel so well and stay soft until the last cookie is gone. I hope you enjoy them as much as we have

ingredients:
2/3 cup solid shortening (no substitutes just use plain white shortening)
2/3 cup margarine (not butter)
1 cup sugar
1 cup brown sugar (packed)
2 eggs
2 teaspoons vanilla
3 cups flour
1 teaspoon baking soda
1/2 teaspoon salt
12 ounces milk chocolate or semi-sweet chocolate chips
1 cup nuts (chopped optional)

directions:
Cream together shortening, butter, sugar, brown sugar, eggs and vanilla.
stir in remaining ingredients.
drop by teaspoon full onto ungreased cookie sheet.
bake at 375 for 8-10 minutes or until cookie is lightly brown on top and darker brown on edges.
They almost look like they are buring on the bottom when done but trust me they are not.
This recipe hasnt yeilded a crunchy cookie yet even when i havbe burnt them.

The trick to making a chocolate chip cookie stay soft and chewy has nothing to do with the recipie and everything to do with the cooking time. Cook at recommended temperature for no longer than 9 minutes. Take the cookies out let them cool on the pan because if you try to place them on a rack they will fall apart. They will finish cooking on the counter the result is a no fail perfect chocolate cookie that remains soft and moist. That's it no special recipie no special container. Just don't over cook them.

You can bake them for 7 or 8 minutes. Don't cook them anymore. Leave on pan for 1 minute and then take off let cool for a few minutes and store in an air tight container.

I hate to say this, because it's so bad for you, but the best way to a soft cookie is to use shortening instead of butter or margarine. I'm going to try Erika's recipe.

I was told one time by my mother-in-law to add a slice of bread to the container and it worked.
