I was thinking something different, like not just your regular chocolate cake or something. I'm willing to spend as much time as I need to on it. something complicated. I like a good challenge.

if you want something challenging......make a 3 layer cake with all her favorite toppings and flavors. All you have to do is take 3 boxes of cake mix and bake them in different sized circle baking pans and then stack them on top of each other when they're cool. Make sure they are baked perfectly though...otherwise they will fall apart! its soo yummy too!

A dozen cookie Daisy's - make or purchase sugar cookie dough then cut circles 2" in diameter one will be the center and cut the other in to 6 triangles and arrange around the center - place a skewer in the center back and bake as directed in recipe (because of the skewer you may be only able to bake 6 at a time) then remove from sheet, cool and use colorful royal icing to decorate. Place some plant foam in the bottom of a vase or flower pot and arrange the "flowers" present as you would a bouquet. Good Luck!

Royal Icing
Ingredients:
2 large egg whites

2 teaspoons fresh lemon juice

3 cups (330 grams) confectioners (powdered or icing) sugar, sifted

In the bowl of your electric mixer (or with a hand mixer), beat the egg whites with the lemon juice. Add the sifted powdered sugar and beat on low speed until combined and smooth. The icing needs to be used immediately or transferred to an airtight container as royal icing hardens when exposed to air. Cover with plastic wrap when not in use.

**When using large countertop mixer or for stiffer icing, use 1 tablespoon less water.

Thinned Royal Icing: To thin for pouring, add 1 teaspoon water per cup of royal icing. Use grease-free spoon or spatula to stir slowly. Add ½ teaspoon water at a time until you reach proper consistency.

How about a lemon pound cake with raspberry and icing. Make a pound cake but put lemon zest and lemon juice in it. Remove cake from pan and let cool completely. After it's cool, take some raspberry jam and spread it on top of the cake, make icing out of confectioners sugar and lemon juice.......Icing will set hard and this cake does taste really good. I guess you can use strawberry jam if you like. Or you can make of those huge cookies and write in icing Happy Birthday

i have a recipe that never fails me..it impresses everyone and they alllll want the recipe.

oreo truffles:

1 pkg. (1 lb., 2 oz.) Oreo Cookies
1 pkg. (8 oz.) Cream Cheese
8 oz. Baking Chocolate, melted

crush 9 of the cookies to fine crumbs in food processor; reserve for later use. (Cookies can also be finely crushed in a resealable plastic bag using a rolling pin.) Crush remaining 36 cookies to fine crumbs; place in medium bowl. Add cream cheese; mix until well blended. Roll cookie mixture into 42 balls, about 1-inch in diameter.
Dip balls in chocolate; place on wax paper-covered baking sheet. (Any leftover chocolate can be stored at room temperature for another use.) Sprinkle with reserved cookie crumbs.
Refrigerate until firm, about 1 hour. Store leftover truffles, covered, in refrigerator.

For my friend I made cupcakes. I used a vanilla cake batter and used food coloring to make the batter her favorite color. Then I put a white icing and in the same color as the batter wrote happy b - day and her name having each letter on each cup cake.
