Empanada Dough

Stuff these with your favorite ingredients! Use only butter for this recipe. This dough should make about 10-12 empanadas depending on the size you are making them. This dough can also be made using a food processor and completely frozen butter pieces, though you will have to be careful not to overprocess the dough when mixing on the processor.
2 1/4 cups all-purpose flour
1 1/2 teaspoons salt
1/2 cup partially frozen butter (cut into small cubes, place the butter cubes in the freezer until ALMOST completely frozen)
1 large egg
1/3 cup ice water
1 tablespoon vinegar

In a large bowl sift together flour and salt.
Blend in the cold butter cubes using you fingers or a pastry blender until the mixture resembles coarse meal (the mixture should be pea-size).
In a small bowl whisk together egg, ice water and vinegar.
Add to the flour mixture, stirring with a fork just until incorporated (the mixture will look somewhat lumpy).
Transfer the mixture onto a LIGHTLY floured surface.
Gather the dough together with your hands and gently knead with the heel of your hand once or twice (just enough to bring the dough together, do not overwork the dough or it will be tough!).
Form the dough in a semi-flat ball or rectangle.
Cover the dough tightly with plastic wrap and chill for 1 hour or up to 8 hours.
Roll out the dough, then cut into desired size circles.
Fill with favorite fillings then close the dough over the filling as you would a pierogi.
Brush the ends with egg wash then seal together with a fork.
Bake at 350 for 20 to 35 minutes or until crust is golden brown.

Empanadas Recipe
Filling for Beef Empanadas Recipe
* 4 onions chopped
* 1/2 cup oil
* 1 tbsp paprika
* 1 lb ground beef
* salt, oregano, pepper
* 1 bouillon cube
* 3 eggs
Directions:
Fry onion in hot oil until cooked, lower the heat and add paprika and ground beef, when cooked add the rest of the spices, and the bouillon dissolved in 1/2 cup of water.Let it simmer for 5 to 10 minutes on low heat. When cool use to stuff the empanadas.
Ingredients for the Dough:
* 5 cups flour
* 2 tsp baking powder
* 1 tsp salt
* 1/4 lb lard
* 1 cup milk
Dough preparation:
Sift flour, baking powder and salt together, add melted lard and hot milk, mix little, mixing well, but not kneading. Let stand for 20 minutes and then roll it.
Cut in circles approximately 6" diameter, and put in each of them one tbsp stuffing, one olive, 2 or 3 raisins, one slice of hard boiled egg, moisten the edges and fold shaping them as triangles or rectangles, brush with egg white or milk, puncture in 2 or 3 spots.Place on a baking sheet and bake for 40 minutes at 375 F.
Note: Empanadas, also called a meat pie, vegetable pie, turkey pie. My point the filling is of your choosing. The method is the same. For example you will find a little deviation with this Empanada recipe. They also furnishpictures on the dough making, you may find helpful.
