How about a nice frittata. You bake it and then it can be served room temperature or microwaved. Remember to taste your dish home and make copies of this recipe for when they ask.

This is a nice Colorful Frittata

Ingredients
1 Cup Broccoli Florets
3/4 Cup Sliced Fresh Mushroom
2 Green Onions -- finely chopped
1 Tablespoon Butter
1 Cup Cubed Fully Cooked Ham
8 Eggs
1/4 Cup Water
1/4 Cup Dijon Mustard
1/2 Teaspoon Italian Seasoning
1/4 Teaspoon Garlic Salt
1 1/2 Cups (6 ounces) Shredded Cheddar Cheese
1/2 Cup Chopped Tomatoes

Instructions
In a skillet, saute the broccoli, mushrooms and onions in butter until tender. Add ham; heat through. Remove from the heat and keep warm. In a mixing bowl, beat eggs, water, mustard, Italian seasoning and garlic salt until foamy. Stir in cheese, tomatoes and broccoli mixture. Pour into a greased shallow 1-1/2 quart baking dish. Bake at 375 degrees F. for 22-27 minutes or until a knife inserted in the center comes out clean.

Taco salad is usually a big hit for potlucky type things.

You make up the hamburger mix ahead, and drain it and chill it. This is basically hamburger with onion bits, maybe some bacon, maybe some tiny jalepeno bits, and salt, pepper, cayenne, chili powder, cayenne, tobasco, whatever you do to make taco meat. Maybe you use a seasoning packet?

Then you make a salad, lettuce, tomatos, olives, frozen corn, drained black beans, onions, whatever else strikes your fancy...for a really fresh crisp taste, add some fresh cilantro.

Some things that go in at the last minute are shredded cheddar, you could also add chunks of avocado, sour cream, etc. The goopy gloppy stuff....and the meat, and crushed tortilla chips, with or without flavor, such as Doritos.

My fav salad dressing is actually just salsa right out of the jar or homemade pico de gallo, but any traditional dressing would be great. Buttermilk ranch, avocado, something creamy or spicy would be great.

That depends on what everyone else is bringing. And are you planning to do a full out meal? Or just finger foods??

Try slicing a loaf of french bread in half lengthwise, and making a quick pizza bread out of it. Add sauce, mozzarella, fresh veggies...then pop into the oven at home and bake. Wrap each half in tinfoil, then pop into the oven to reheat at the house of your hostess. Cut it into 2 inch slices so people can each have a couple of pieces. This would be nice regardless of what everyone else is bringing. It could be part of a meal if you have salads, chips, etc. OR...it could be a finger food.

A nice pan of frosted brownies cut into two inch squares is also quick and easy and will satisfy the chocolate cravings you will all likely have after eating salty!! :)

brushetta always is delicious. Just take a baguette, slice the bread in thin rounds and brush w/ olive oil and take a garlic clove and rub it on each one. Toast in the oven (350) until golden and remove. Take roma tomatoes (or other firm low juice tomatoes) and cut in half; remove seeds and juice and chop (used about 2 pounds of fresh tomatoes). Chop one red or white onion and add to tomatoes; slice thin ribbons of basil, about a cup or more to taste. Add to mixture. Take 1/4 cup of olive oil, add salt and pepper to taste. Optional: add 1/8 cup balsalmic vinegar if you like. Mix all. You can do this the night before and refrigerate it in a sealed container. Then, let guests top their baguette slices w/ the tomato mix.

Hello there!

I find that although we all protest and say "Oh no, they're entirely too fattening to eat more than one," we all like a good sausage ball. Easy to make, easy to package and transport, and you can always tweak the recipe to however you like them.

Here's a whole slew of recipes on allrecipes.com.

You and your friends enjoy and have fun! :)

BBQ Li'l smokies.

Empty one or two packages of cocktail wieners (Li'l Smokies) into crockpot. Cover with your favorite BBQ sauce. Heat on high until hot, then keep warm on low.

How about some pasta salad?

You might want to add chopped broccoli to jazz it up.
