Make mashed yams with them... Boil them until they are soft... Let them cool a little so they are handle-able... Peel the skin off (it will come right off)... Place them in a mixing bowl... Use an electric mixer on them until it looks creamy and there are no larger pieces left, about 3 min (((if you use an electric mixer, the stringy bits will cling to the beaters and the mash will not be stringy)... Then beat in a small amount of milk and a low fat/low cholesterol butter if you wish, maybe beat in a little cinnamon or ginger or both if you wish or a couple drops of lemon juice instead if you like a fresh citrusy flavor.... There you have it... mashed yams, yum!!!

Boiling them takes out all the vitamins and good taste. Here in the south, we throw them, skin on, in the oven around 400 degrees and just bake them until you see them crack and start to bubble through. You can sprinkle on some butter flavored "buds" and enjoy hot out of the oven! Delish!

now that they have been boiling, cut them into 1 inch chunks. Season with olive oil, Garlic powder, a little Chile powder, salt and pepper and bake at 400 for about 20 minutes or until fork tender. They are like oven fries.

Take them out of the boiling water now, and bake them like a potato. It will be a tasty, twice-baked taste. Then you can make them as healthy or as unhealthy as you want, based on how much butter, etc. that you put on them.
Or, if you get new ones, de-skin them, cut them, and put them on salad.

Stop boiling them at this point and now that they are par-boiled, bake them at 350 degrees until a fork goes into them easily!

You could have baked them in the oven.... wrap them in foil wrap first.... They will have a natural sweet taste...@
