I have a cabinet full of spices. What can I use to get the same results as the packaged kind? Thanks for any help.

Why, oh why would you use packaged meatloaf seasoning, when you can make a superior meat loaf from scratch? My favorite recipe is called Mean and Lean Meatloaf, and it comes from Rosie's Dinner.
2 pounds ground beef (or one pound each of beef and turkey)
2 eggs, beaten
1 cup rolled oats
1/2 cup chopped onions
1/2 cup ketchup
1/4 cup chopped green pepper
2 tbsp steak sauce
1 tsp black pepper
1/2 tsp salt
1/2 tsp basil
1/2 tsp garlic powder

Preheat the oven to 350, and grease a large loaf pan. In a large bowl, combine the meat, eggs, oats, onion, ketchup, pepper, steak sauce, black pepper, salt, basil, and garlic powder. Mix well until combined.
Transfer to the loaf pan and smooth the top.
In a small bowl, whisk together the following ingredients:
1/2 cup ketchup
3 tbsp brown sugar
1 tsp mustard powder

spread over the top of the meat loaf mixture. Bake for 1 - 1/2 hours, until the inside reaches 160 degrees, let stand for about 15 minutes before slicing.

BEST MEATLOAF

BASIC MIX:

1 1/2 pounds ground beef
1 c. fresh Italian style bread crumbs
1/4 cup fresh parsley, chopped
3-4 cloves garlic, finely minced
1 large onion, finely chopped
1 large green bell pepper, chopped
1 egg
1 1/2 teaspoon salt
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/4 teaspoon pepper
1 8 oz can tomato sauce
1 cup ketchup
1/2 cup water or beef stock (can use bouillon)
3 tbsp. Balsamic vinegar
3 tbsp. brown sugar
2 tbsp. Dijon mustard
2 tsp. Worcestershire sauce
1/4 c. Parmesan, grated (optional)

In a small bowl, combine tomato sauce, ketchup, Balsamic vinegar, brown sugar, Dijon mustard, Worcestershire sauce, and water/beef stock.
In a large bowl, combine beef, bread crumbs, onions, green bell pepper, parsley, chopped garlic, egg, seasonings, 3/4 cup of tomato mixture, and optionally, Parmesan cheese.

Form into loaf. Place into shallow 7 by 10 in. pan or bread loaf tin, lightly oiled. Pour remaining liquid over meat loaf to coat. Bake in a 350 degrees Fahrenheit oven for one hour and 15 minutes, basting occasionally with ketchup or your favorite barbecue sauce.

Ann Lander's ran this recipe in her column for decades! My entire family uses it because it is easy and tastes great!

MEATLOAF (ANN LANDERS)
2 pounds ground beef
1 envelope Lipton’s Onion Soup
2 eggs
1 ½ cups Italian breadcrumbs
8 ounces tomato sauce
¾ cup ketchup
1 teaspoon MSG / Accent
½ cup warm water
3 strips of bacon

Mix all ingredients except for bacon and tomato sauce. Place mixture in a loaf pan. Cover with bacon. Pour tomato sauce over the bacon. Bake at 350 degrees for one hour.

the beauty of meatloaf is that you can make it simple with little spice, or fancy with the works. Just use your imagination. From simple with just a tiny bit of salt, some garlic, a shot or two of soy sauce and cook, to making glaze with ketchup or tomato sauce, it all turns out great.

Here is a great meatloaf reacipe

Ground beef
1 pkg onion soup mix
1 egg
1/4 oatmeal or crushed saltine crackers.

Sage Rosemary and Thyme are the regular herbs I use. Don't expect it to be the same as the packaged kind as they will have their own ratios.
I always experiment and probably never have it the same twice.

i never used packaged. try using a mixture of tomato sauce / ketchup with a few splashes of Worcestershire sauce, a few drops of tabasco, a little garlic powder some oregano and a pinch of black pepper.

i do about what jenna does i use either bread pieaces or oatmeal in it too have fun you will love it better~~the lady is correct i never make it the same way twice if u like mushrooms fresh ones uncooked bake it with the meat yummmmmm u will love it

i have never put any seasoning other than peppper and salt in the meatloaf....i dont know anyone else that has either
