The New Testament isn't an exhaustive dictation of everything Jesus did and said (John 21:25). And even if he didn't explicitly tell the Apostles and others to write things down, doesn't mean he was against it. In Matthew 16:18-19 Jesus establishes his church, of whom Peter was the first leader. Jesus basically gave Peter and his successors the authority confirm truths and reject falsehoods. And one of the truths that was affirmed was the collection of books that make up the Bible and that they are written without error (and that's a whole different topic altogether).

In the bible at 2 Peter 2:19-21 you will find your answer.
"Consequently we have the prophetic word made more sure, and YOU are doing well to pay attention to it as a lamp shining in a dark place, until day dawns and a daystar rises in your HEARTS. [20] For you know this first, that no prophesy or scripture springs from any private interpetation. [21] " For prophesy was at no time brought by man's will, but men spoke from GOD as the were borne along by holy spirit."
Your question was " how can we take it as a document?"
....because it IS THE WORD OF GOD!

We know next to nothing about Jesus,
The stuff written about him in the Bible was written decades after he supposedly died. The first writings were Paul / Saul who never met Jesus, but only met people who supposedly met him. So, it's second-hand information, at best.
Paul really didn't say much about Jesus. He said nothing about his upbringing or earlier life. He doesn't give much of Jesus' teachings, either.
Decades after Paul wrote about him, suddenly some stories were "remembered" by Mark, or whoever wrote in Mark's name. (It was common in those days to sign a more famous name to your work) The later writings of Matthew, Luke, and John seem to have copied Mark or used similar stories or myths that were being circulated in that day.
There were many other stories written about Jesus, too. As Christianity was becoming more popular, people would add to the legend, just as the Gospel writers did.
Around the mid-300's, Constantine converted to Christianity, and made Christianity a state religion. He convened a council of Bishops to decide what stories would be official canon or not. They rejected the rest, for whatever reasons, calling them the Apocrapha.
After more councils, they decided other doctrine, such as whether Jesus was divine or not, created the concept of the "Trinity", decided that Mary was a virgin and a bit divine herself, and other matters not addressed in the Bible

You can't be sure that it is the word of God, for that very reason. Likewise, you can't take it as a document of anything.
Incidentally, what Christians call the 'Old Testament' is what Jews know as the entire Bible. Jews, however, call it the 'Tanakh'.
Nowhere in the Bible does it say that God wrote anything down whatsoever. Occasionally, God turns up and we hear what he says, but there is not a single book in the Bible which is represented as being the word of God himself. If you read the Bible, you will see that this is true.
The only holy book which is supposedly the word of God himself is in fact the Qur'an, also known as the Koran. However, only Muslims believe that it's the word of God.

The Holy Bible was God-inspired, by the Holy Spirit, to ensure that future generations would have the opportunity to both, learn and know about Jesus Christ. Do you really think that a wise and loving God would leave the process of our eternal futures, solely, within the hands of mere humans?

you can't because people changed the truth .
but the coran was not and it wont change , if you want the truth read it , it's a book of knowledge that came to show the truth.
there is one god that he is the greatest and the strongest , and jesus was a prophet of god.
jesus was born without father and this is was a miracle to prove that god exist and he is the strongest and he created us and can created us even without father. and god can do every thing.

if it was written voluntarily than why is the bible as were other books written by the inspiration of God? Doesnt that make God the author of the bible even though it was written on brass plates by his choiced prophets in biblical times?

Jesus didn't ask anyone to write anything about HIM, specifically, but He did ask people to spread His Word. Many of His followers found that the best way to do that was to spread word also of Jesus Himself.

The book of John was written by John ....who PERSONALLY WITNESSED all that Jesus did and suffered.
PLease learn the truth about the origin of Scriptures and not simply what you choose to read on foolish atheists internet sites.
