Broccoli Salad
INGREDIENTS
* 10 slices bacon
* 1 head fresh broccoli, cut into bite size pieces
* 1/4 cup red onion, chopped
* 1/2 cup raisins
* 3 tablespoons white wine vinegar
* 2 tablespoons white sugar
* 1 cup mayonnaise
* 1 cup sunflower seeds
DIRECTIONS
1. Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, crumble and set aside.
2. In a medium bowl, combine the broccoli, onion and raisins. In a small bowl, whisk together the vinegar, sugar and mayonnaise. Pour over broccoli mixture, and toss until well mixed. Refrigerate for at least two hours.
3. Before serving, toss salad with crumbled bacon and sunflower seeds.

1. Pico de gallo is great. Cilantro, lime juice, onion, tomatos, and jalepenos...all in proportions you like best. Add some salt to pull the water out and make it a little smooshier.
1.5. You can add frozen corn, olives, and or drained black beans to spin it a different way.
2. Start a pot of boiling salted water and add fresh broc, cauliflower, and carrots....cook until they are just tender and then blanch in ice water and drain. Add bottled italian or ranch dressing. Serve chilled.
3. Margarita salad is really good...this is tomato slices, fresh mozzerella cheese, and rough chopped basil. The dressing is olive oil, balsamic vinegar, garlic, salt and pepper. Dress and set aside, and serve at room temperature.
4. Cucumbers (and onions!) finely sliced are great in plain salted water or salted vinegar. They are kind of like pickles but with a fresher cleaner taste.
5. Don't forget to mix and match your fruits and veggies for a really neat twist. Strawberries in a mesclun mix with balsamic and olive oil dressing is a great kick instead of raspberries. Mandarin oranges go with lots of savory salads.

Low carb tortilla
Avacado slices
Soy Bacon
Carrots
Alpha Sprouts
Wrap it up and go...
I change up the mix but its always a soy bacon and avacado base.. I'll add lemon or lime juice, lettuce, tomatoes, onions and so on..what ever produce you like.
