Courgette fritatta.

1 onion sliced
1 courgettes sliced (finely)
1potatos (cut into cubes)
3 eggs
2 slices streaky bacon

Fry potatos gently over a med heat until cooked, put aside.
Fry courgette on both sides, put aside.
Fry onions, put aside.
Fry bacon. Mix all ingredients together, add salt and pepper. Mix eggs in a bowl and season, then put mixture into a frying pan. Pour in eggs and cook until the bottom feels solid, then place the pan under a hot grill to cook the top.
If you used low fat 1 cal fry light spray, it would be healthy and low in fat.

Brown up 3 or 4 chicken breasts. Cook about 3 or 4 cups of rice. Place the rice in the bottom of a 13X9 pan or dish. Pour 2 cans of cream of mushroom soup(thick) over the top. Heat all the way through. Use lowfat soup for a lowfat meal.
