It's fat free!!

3 lbs roma tomatoes, peeled and seeded or 2 28 oz cans of whole tomatoes, seeded
3 cloves garlic, smashed
1 red or white onion
2 jalapeno peppers seeded (if desired) and chopped
This will be hot. If you don't like it hot, use just 1
juice of 1 lime
1 tsp sea salt (or to taste)
1 cup fresh cilantro

Chop garlic, onion and jalapenos finely. Cut tomatoes in quarters. Mix with remaining ingredients in a blender or food processor. blend until it's as smooth as you like

A good homemade salsa shouldn't have much fat in it - unless you are adding a ton of avocado's to it....

6 tomatoes, preferably roma (or 3 large tomatoes)
1/2 medium onion, finely chopped
1 clove garlic, finely minced
2 Serrano or jalapeño peppers, finely chopped
3 tablespoons cilantro, chopped
Juice of 1 lime
1/8 teaspoon oregano, finely crushed
1/8 teaspoon salt
1/8 teaspoon pepper
1/2 avocado, diced - optional

1. Combine all of the ingredients in a glass bowl.

2. Serve immediately or refrigerate and serve within 4 or 5 hours.

Real salsa is very lowfat... like zero - it's made from veggies and spices.

critical ingredients (all fresh):
- tomatos. my wife uses canned Ro-tel but a purist would cry.
- onions
- jalapenos (careful)
- cilantro
- pepper
- maybe some lime or lime juice
- salt

Have at it... it's hard to go wrong.
