Red onions (Bermudas) contain more sugar than white or yellow onions, and they tend to be very mild and sweet, but they don't keep very well. Use them when you can get them in season.

There's not much difference between white and yellow onions. The Walla Walla sweets, and Vidalia onions are typically grano/granex variety onions. The reason why they're sweet is that there's very little sulfur in the soil where they're grown; those varieties are nothing special anywhere else.

I like the taste of vidalias in most everything with the exception of purples for salads. It all depends on your particular taste preferences.

Vidallia onions are mild and sweet.Good in salads etc. for example.
Yellow onions are better for cooking as they are stronger.Good for soups,meats etc.
Purple onions are also mild and good in salads,coleslaw etc.
Depends on how strong an onion taste you like.

yes some differants like red ones are alittle hotter in taste really depends on what you like but they do change how foods taste but you can use what ever you have on hand it will not hurt anything
