I put beans on my salad, and like Lima beans and ham hocks, but I don't know of any other ways to make beans that taste good.

Cajun Bean Salad
In a large mixing bowl, mash 1 clove garlic in 2 T salt until fine and crumbly. Add 1/4 cup olive oil and 1/4 cup red wine vinegar, 2 T of Creole mustard. Mix well and add drained beans. You can use what ever you like:
Green Beans
Lima Beans
Shell out beans
Black-eyed peas
ETC...The more variety the better!!!
Stir to coat with the above dressing. Let set overnight for the best flavor. Optional: Add chopped red onions and chopped celery for more added flavor and crunch.

Kidney Bean Salad
3 C canned kidney beans
1 C chopped sweet pickle
5 hard cooked eggs, sliced
3/4 C diced celery
1 C mayonnaise
lettuce
Drain beans; add pickles, eggs and celery and toss together lightly. Add mayonnaise and blend. Chill throughly. Serve on shredded lettuce, garnish with egg wedges.

Green Bean Casserole
1 qt green beans (drained)
2 slices bacon
1 can mushroom soup
1/2 C water
onion rings (frenches)
Brown bacon until crisp. Crumble bacon into green beans. Add bacon drippings, soup and water and pour into greased casserole dish. bake at 350 degrees for 1 hour and 10 minuts. Before removing from oven, place onion rings on top of casserole.

Calico Bean Bake
1/2 lb bacon, diced
1/2 lb ground beef
1/2 C diced onion
1/2 C Ketchup
1/2 C sugar
1/2 C brown sugar
1 t dry mustard
1 t salt
2 T vinegar
1 can pork and beans
1 can kidney beans, drained
1 can lima beans, drained
Cook bacon, beef and onion. Mix all ingredients and bake at 300 degrees for one hour.

You could also cook some pinto beans with a ham hock, turkey necks or smoke turkey drumstick.

Get you a bag of beans and let them soak overnight. Drain and rinse well. Bring a pot of water to a boil add your meat then some seasoning (house seasoning, garlic salt, pepper, seasoned salt), let boil for one minute, then add your beans and let them come to a boil, boil the water down some, add a lit to it turn the heat down and them them simmer.

When cooking mine I let them simmer anywhere from 30 minutes to an 1 1/2. It all depends on the beans you buy and the consistency that you want them cooked.

Five-Bean Soup with Spaghetti Sauce and Potatoes
2 Tablespoons extra virgin olive oil
4 cloves garlic, minced
1 medium onion, diced
3 celery stalks, diced
2 carrots, diced
1 medium potato, diced
1/4 cup barley
4 cups water
1 bay leaf
1 15-ounce can pinto beans
1 15-ounce can black beans
1 15-ounce can kidney beans
1 15-ounce can navy beans
1 15-ounce can adzuki beans (Can't find adzuki beans? Substitute any other bean variety that strikes your fancy.)
1 cup corn, fresh or frozen
2 cups spaghetti sauce (or more, to taste)
1 teaspoon dried oregano
1 teaspoon dried basil
Heat oil and sauté garlic and onion until onion is translucent. Add celery, carrots, potato, barley, and water.

Simmer 30 minutes.

Add beans, corn, spaghetti sauce, and herbs. Simmer 5 to 10 minutes, then serve.


Frontier Baked Beans
2 pounds cooked navy beans or other white beans
1 1/2 cups tomato juice
1 cup chopped pecans, toasted
3/4 cup dark brown sugar (or less)
3/4 cup strong black coffee
1/2 medium red onion, chopped
1/2 cup catsup
1/2 cup bourbon
4 slices slab bacon, chopped
1 carrot, finely grated
2 Tablespoons unsulphured dark molasses
2 Tablespoons dry mustard
Preheat oven to 350ºF.

Mix all ingredients together in a large bowl, then pour it into a baking dish. Bake the beans, uncovered, about 1 1/2 hours or until they have thickened and cooked down, with a "skin" just beginning to form on the top of the beans.

These beans reheat well and will keep in the refrigerator for several days.

Kidney Bean Hash
2 Tablespoons olive oil
1 medium onion, chopped
1/2 green pepper, chopped
1/2 red pepper, chopped
2 to 3 boiled potatoes, chilled and diced with skins still on
1 15-ounce can kidney beans
1/2 cup water
dash of salt
dash of pepper
dash of garlic powder
dash of Tabasco sauce
dash of Mrs. Dash seasoning
Heat the olive oil in a large frying pan. Saute the onion until it's soft. Add the green and red peppers and saute briefly.

Add the diced potatoes and mix well. Cook for 10 minutes, turning with a spatula every 2 minutes.

While the potato mixture cooks, rinse the beans well to remove the "goo," then mash 1/2 to 2/3 of the beans with a potato masher. Mix the beans into the mixture in the frying pan, add 1/2 cup water, and cover. Cook over medium heat for another 5 minutes.

Season to taste. Serve and enjoy.

Fiesta Cassoulet
1 pound angel-hair pasta, uncooked
2 14 1/2-ounce cans tomatoes, diced
2 15 1/2-ounce cans black beans
4 1/2 cans water
2/3 cup frozen corn
9 ounces smoked sausage, thinly sliced
2 1/4 teaspoons garlic salt
1 teaspoon red pepper flakes (optional)
2 Tablespoons grated Jack cheese (optional)
In a large saucepan, combine all ingredients. Add 4 1/2 cans of water, using can from diced tomatoes. Stir well. Bring to a low boil, cover, reduce heat and simmer for 10 minutes.

To serve, ladle into soup or chowder bowls. Garnish with grated red pepper and Jack cheese, if desired.

Makes 12 servings.

Roasted Cod with Lima Beans
Difficulty: Easy
Prep Time: 10 minutes
Cook Time: 15 minutes
Yield: 4 servings

1 (10-ounce) bag frozen lima beans
4 teaspoons olive oil, divided
4 tablespoons chopped fresh parsley leaves, divided
Salt and freshly ground black pepper
4 (6-ounce) pieces cod
8 tablespoons white wine, divided


Preheat the oven to 375 degrees F.
Place 4 (15-inch) long sheets of aluminum foil on a work surface. Divide the frozen lima beans among the foil sheets (about 3/4 cup per sheet). Place 1 teaspoon of olive oil 1 tablespoon of chopped parsley, and a pinch of salt and freshly ground black pepper on each pile of beans and gently toss to combine. Place 1 piece of fish over each pile of beans. Pour 2 tablespoons of white wine over each of the fish and sprinkle a pinch of salt and freshly ground black pepper. Seal up the foil packets.

Place the foil packets on a baking sheet. Bake for 20 minutes depending on the thickness of the fish. Gently transfer the beans and fish to a serving plate and serve immediately.

Cook the lima beans.
Drain and add some butter and lemon pepper to them.Very tasty.
