I find left over pork best eaten cold with a salad or potatoes and pickles. You can reheat it but best done very slowly.

You should reheat it with moisture. Either in something like gravy/sauce. Or you can steam it (in a veg steamer). If your pork is coming out dry you are probably over cooking it. Pork shouldn't be cooked past the recommended doneness for the cut. Always take pork out when it is 5 degrees less than the correct temp, tent it and let it set. It will finish cooking and reach a safe temperature.

keep in the fridge when not using it and only reheat it once. Obviously if you have a big bit of meat then slice off what you need and put the rest back in the fridge.

You must be especially careful with pork - I wouldn't re-heat it, if I was going to eat it the next day I would slice it thinly and pour hot gravy over it!! or eat it cold in sandwiches or with salad.
Reheating pork is a recipe for disaster - upset tummy and worse!

Always be careful with meat that has been cooked before. Presumably you kept the roast in the fridge? You should cut it into pieces, fry with onions/seasoning/spices, add stock and vegetables and let it simmer for 15 mins.......no chance of any nasties surviving after that!

as long as you kept it in the fridge overnight, then yes, you can reheat it ONCE. make sure it is properly re-heated though just to be safe

I wouldn't unless you want a dicky tummy, eat it cold or better still be like me and don't eat meat at all!
