Protestants didn't evolve from Catholics. There was a lot of corruption in the Catholic Church, that many didn't agree with, so Martin Luther stepped up and separated, and created the first protestant church. Some Catholics remained loyal to the pope and the church, while others went on with Martin Luther.

The Protestant Church was founded as a result of the reformation in 16th century. It was formed as a result of the failed attempt to reform the Roman Catholic church. Roman Catholic theology is a system of earning salvation by cooperating with grace held out to men, who then respond with their faith, and then salvation is merited to them.
The protestant church was founded on the five sola's of reformation:
1 Sola gratia ("by grace alone"); 2 Sola fide ("by faith alone"); 3 Sola scriptura ("by Scripture alone"); 4 Solus Christus ("Christ alone"); 5 Soli Deo gloria ("Glory to God alone")
In other words, we are saved by “grace alone”, by “faith alone” and by “Christ alone”.
There are still Catholics because Protestants failed to reform the Roman Catholic church and that's why Protestant church was formed.

They fill different niches.
Men cannot live on bread alone.
Catholics are also better at finding food, historically BBQ....
But, they tend to burn it, if left to their own devices.
So, Catholics get bread, hard liquor, the word of the pope, and various things offered to priests by small children.
Protestants are all bread, wine and the word of God.
So, each has his place.
