I am going to be making kabobs with chicken, green peppers, pineapple, and red onion.

To feed approx 20 people how many lbs of the chicken breast will I need?

You need to figure 2 kabobs per adult for 1 serving and depending on how long the skewer is and many veggies to chicken ratio you use, will depend on how much chicken. I use 12 inch skewers and make sure there are 4 pieces of chicken about 1 x 2 inches big on each skewer. I can usually get one good sized breast per each 2 skewers which serves 1 person 1 portion. If you figure it out that way, it is easier. I also precook my meat too in a boil water bath since veggies get done way sooner than chicken does and I want to make certain that I do not cause sickness in my guests.

Well I'd say figure on 1 lb per person, or 1 breast per person. Even cut up they'll still likely not get full on 1 kabob.

Chicken is 1/4 of your ingredients there, which is a good mix.

I say make a couple kabobs to test the recipe, see how many you enjoy.

It also depends on other dishes being served.

Chicken Kebabs.
4 Chicken Breasts.
2T Soy Sauce.
2T Dry White Wine.
1 Clove Garlic Crushed.
1t Fresh Grated Ginger.
Chop chicken into 2cm (¾”) cubes. Mix in a bowl with soy, wine garlic and ginger and marinade for 1-2 hours.
Prepare vegetables for kebabs. Mushrooms, tomatoes, peppers (bell), onions, pineapple, baby corn.
Thread onto skewers and cook on the grill.
Serves 4 Adults

You should allow 6 ounces of chicken per person, so you will need about 7 1/2 pounds of boneless chicken breasts. If you are using breasts that are not deboned, skin on, then figure on 10 pounds. Bones account for about 1/3 of the weight, skin adds another 5%. If you are handy in the kitchen, then I'd suggest bone in, you can save a lot of money by deboning yourself.

I'd say about 5 lbs..One chicken breast per person about would be good so whatever that is.
