I didn't know if salsa made from fresh tomatoes, etc. could be safely frozen. I would appreciate your help. The recipe made more than I thought it would, and I need to save it some how.

You can, but be prepared for the consistency to change - fresh tomatoes do not freeze well. You are not going to be able to defrost this and still have nice, whole chunks of fresh tomato. (sadly enough...I love fresh salsa!)

Yes, it is safe to freeze fresh salsa. As others have mentioned, there will be a texture change. The texture will be reminiscent of commercially canned salsa. I've found the best taste is obtained by letting the salsa "rest" in the refrigerator 12-24 hrs. before packaging and freezing. This lets the flavors meld. There is almost no melding of flavors if it is immediately frozen. Alternatively, I sometimes will bring the salsa to about 185 degrees F, or a bit more, over med-lo heat; let it cool; then package and freeze. I do this when I don't have the spare refrigerator space to accommodate the batch. Of course, the salsa will cool quicker if you divide it among several bowls/pans.

Instead of freezing the salsa, try canning it. My family did this with homemade salsa, and spagetti sauce and it never made the tomatoes mushy or changed the flavor of the food. And no freezer burn to worry about.

You can freeze it but it won't be the same. You can use it to make a cooked sauce but not a fresh dip.

Yeah you can freeze it just make sure when you defrost it dont do it in the microwave just take it out of the freezer the night before.

Yes it can, I do it all the time because I make my own. I freeze it in 1 quart freezer bags.

Yes it can be frozen but when you thaw it out it will be a mushy mess.
