Tuna , Ahi( the same thing) is the most common for sushi. Also salmon is great. Tell the butcher that you want to make sushi so he knows you want the best grade of fish. This is very important. Be sure you buy the correct type of rice too because if you don't, the sushi will not come out right. Do not cook the fish as the best sushi uses raw fish except not raw shrimp or crab.

In most cases raw fish is used in Sushi at a Sushi Bar, but the EEL is cooked and you can get other fish steam on request
Some places ... the cheap one's use imitation crab meat mostly and that is already cooked
You get what you pay for

Some but not all. Crab in California roll usually isn't even crab but krab. Imitation which is definitely cooked. Tuna will usually be raw but eel is generally cooked. Halibut, sea bass and squid are usually but not always raw but octopus at most of the places I have tried is cooked. Raw is better.

The crab and eel isnt but when it comes to tuna it can be raw or cooked. You can see the difference when tuna is cooked it turns an off white colour but when it is raw it would be a red/dark pink colour. Both cooked and raw tastes good.

see some places you may get raw seafood. some places steam the seafood. when you go eat sushi just ask them how they prepare the meat. better to ask first before you buy and you are not happy with the product you get. you should go in and watch them prepare the rolls you will be amazed. they have sushi bars where you can sit right in front the cook and watch what he does.

The imitation "crab" is usually pollack, I think, and it's precooked.
The eel is cooked.
But I prefer the raw. It just tastes better, and makes me extremely happy.

no, tuna && eel are cooked everything is basically cooked except for the fish eggs & salmon. the crab meat is actually artificial. its "fake crab meat"
