You have to make sure the eggs are not totally fresh. Buy the eggs like a week before you boil them. Fresh eggs tend to be harder to de-shell than ones a little older.

Here is the proper way to do it:

Water should cover the eggs by 1 inch, so use a tall pan. Lay the eggs in the pan and add cold water. Set over high heat and bring just to the boil; remove from heat, cover the pan, and let sit exactly 17 minutes. When the time is up, transfer the eggs to the bowl of ice cubes and water. Chill for 2 minutes while bringing the cooking water to the boil again. (This 2 minute chilling shrinks the body of the egg from the shell.) Transfer the eggs (6 at a time only) to the boiling water, bring to the boil again, and let boil for 10 seconds - this expands the shell from the egg. Remove eggs, and place back into the ice water. Chilling the eggs promptly after each step prevents that dark line from forming, and if time allows, leave the eggs in the ice water after the last step for 15 to 20 minutes. Chilled eggs are easier to peel, as well.The peeled eggs will keep perfectly in the refrigerator, submerged in water in an uncovered container, for 2 to 3 days.

Just a couple tips....first of all, if you know you are going to boil the eggs, sit them on their sides in the fridge for several hours, this creates a kind of air pocket in the egg that makes them easier to peel after they are cooked. Don't use fresh eggs, they are a major pain to peel, this doesn't mean to use old eggs, just dont boil eggs that have just arrived in the store, if they are several days old, they will peel much easier. Always run cold water over the eggs the minute they are done cooking, keep running the water over them until the eggs are cool, this will also help in the peeling process.

If it is a fresh egg, they should be kept in the fridge for a few days before boiling. Otherwise allow the egg to completely cool down. Usually 15-20 minutes.

Use older eggs. Fresh eggs are always harder to peel. You want some that are a week or two old before you boil them.

Also, make sure the are cooked enough. If they are not the egg will pull apart before the shell comes off even if you do use old enough eggs.

Put a drop of cooking oil in the water put the eggs in and bring to a boil when they are done run them under cold water and they should peel easy

boil the egg for 15 min not 20. a lot of people do that 20 min is too long. 15 min should be just right and put them under cold water after they are done.

Put the egss in cold water for a few minutes after they are done boiling. Lightly roll the egg back in forth in your hands so it can crack in all areas. Then peel.

Adding salt to the water just keeps the shells from cracking when boiling. To keep them from sticking, let them cool first or peel them under cold running water.

Any time I make boiled eggs, after they've boiled and they're done, I run them under cold running water from the faucet ... it makes it easier to peel and you can peel off "bigger" pieces of shell... if that doesnt work, you can always run the egg under water after you've peeled off all you can.. and kinda "rub" it with your fingers to get all the leftover off..
