I'd like it, but then I eat BEEF.
What part of "BEEF" don't you understand?
If you are a vegetarian, then leave my beef alone! If on the other hand you want "taste" in your food, don't be a vegetarian!
I made vege-burgers once and they weren't bad tasting for what they were, but what they weren't was BEEF!

Vegetable soup- Yes.
Vegetable soup with beef- No.
However, this depends on your commitment to vegetarianism. A lot of vegetarians differentiate the levels of vegetarianism out there. From Pesca-Vegetarians(fish), to OvoLacto-Vegetarians(eggs and milk prods) to Vegans (no animal products). So, the interpretation of "Vegetarian" can be quite loose.
If you are just following the lifestyle for health, I would eat it. If you are trying to be animal free, no.

it's up to you if you want to eat it as long as it won't make you feel hypocritical. as far as it being a truly vegetarian soup, i doubt it or it wouldn't have beef in it. it most likely means that it has extra veggies in it. kind of false advertising if you ask me.

perhaps it is only the broth that is beef flavored. so there really is not any meat i it. if you are a true veggie girl then it will do your body loads of good.
