I've got some chicken breasts in some garlic herb marinade in the fridge - gonna cook on the charcoal grill this evening, but I'm stuck on sides.
I've thought about grilled squash & onions, mashed potatos & grilled corn. I also have some cucumber salad in the fridge. Any suggestions on what might be better sides?
I've got rice, baked beans, pinto beans, peas, green beans, carrots, onions, tomatos, garlic etc at the house.......

How about a grilled vegetable medley: slice Squash, onion, potato, and carrots - -par boil your vegetables and put them into foil and grill them on the side while you do your chicken, use your marinade to brush over them while they cook. We did something like that in our cooking class and that turned out great.

that doesn't sound like such a big deal. It depends on your pocketbook as to how much you want to splurge. With these days of overeating and it being so hot outdoors I would think you'd make cold sandwiches indoors and stay inside in the AC. But anyway. If you're grilling and you have some skewers you can put on them carrots, sliced onions, tomatoes and even cut slices of corn and put all that on skewers and put it on the grill but that's another total meal in itself. Chicken and potato slices only would be way too much for me. Cucumber salad (anything mayo) should not be outdoors on hot days like this.

*********PINTO BEAN CASSEROLE
1 package tortilla chips (9 ounces)
2 cans pinto beans, (15 ounces each) rinsed and drained
1 can (15 ounces) whole kernel corn, drained
1 can (14-1/2 ounces) diced tomatoes
1 can (8 ounces) tomato sauce
1 envelope taco seasoning
2 cups (8 ounces) shredded cheddar cheese
Shredded lettuce, sour cream and salsa, optional
Crush tortilla chips and sprinkle into a greases 13 X 9 X 2 baking dish. In a large bowl, combine the beans, corn, tomatoes, tomato sauce and taco seasoning. Pour over chips. Sprinkle with cheese.
Bake, uncovered, at 350 for 18-25 minutes or until heated through. Serve with lettuce, sour cream and salsa if desired.
KIDS LOVE THIS CASSEROLE WHEN YOU SERVE IT WITH TORTILLLA CHIPS. PLAN TO HAVE ISTANT PDDING FOR DESSERT AND YOU’LL HAVE ONE HAPPY FAMILY.

Instead of mashed potatos do potato salad, baked beans, sliced tomatos and the cucumber salad. Maybe top it off with fresh cold watermelon.

Use the cuke salad as that won't last. No sense having it go bad.
Then make the mashed tators and grilled corn.
