Try this, it's amazing!!!
MEATLOAF ROULADE
STUFFING:
1 sm. onion, chopped
1 stalk celery, chopped
2 tbsp. butter
2 tbsp. white wine
Salt & pepper
1/2 c. croutons
3-4 cooked carrots
Fresh parsley
MEATLOAF:
2 lbs. lean ground beef
1 med. onion, chopped
1/2 c. bread crumbs
1 egg
1/2 c. milk
Salt & pepper
1 lb. bacon
STUFFING: Saute onion and celery in butter. Add wine, salt and pepper and cook 1 more minute. Add croutons, cover and shut off burner.
MEATLOAF: Mix all ingredients together in bowl. Add 1/3 cup white wine and mix some more. Spread out on foil with hands and spread with stuffing. Place carrots down the center and parsley down each side of the carrots. Roll, jelly roll style. Wrap bacon all around and bake at 350 degrees for 1 hour. Serve with sauce (recipe below).
SAUCE: Saute 2 tablespoons chopped onion in 1 tablespoon butter. Add a pinch of each: oregano, thyme and celery leaves, a little white wine and 1 cup brown gravy. (Either homemade or canned.) You may also put mushrooms, shallots or any other cooked vegetable of your choice inside instead of, in addition to carrots and parsley.

When I make meatloaf I add my special sauce. But, it is not really so special...more like pathetically simple but, delicious!
I take normal ketchup, add some mustard into it, along with lemon juice and a sprinkle of sugar. Mix it all together..it should taste slightly tangy. I put a bit of it in the meatloaf (which is ground hamburger, onions, egg yolk, large bread crumbs, salt and pepper) cook for about 30 minutes (depending on how big the meatloaf is) and save the rest to put on it during the last 10 minutes as a glaze.
It is so simple...but, yum yum!

I never make my meatloaf the same twice,I always forget what I put in,but basics are 1 lb hamburger,1 lb turkey burger,1 lrg onion chopped,1 lrg egg,1 small can of tomato sauce,a few tbl.of ketsup,2 chopped cloves garlic & flavored breadcrumbs. I can't tell you how much breadcrumbs because it depends on what the consistency is. If it seems too wet add more breadcrumbs,if a little drier than you want add a couple teaspoons of milk until you find how you want it. Then I shape the loaf & place on a cookie sheet and pour ketsup all over it & bake @350 for about 1 hr.

Add some cream, an egg, chopped onion, bell pepper and garlic, bread crumbs, some curry powder, a bit of dried thyme and marjoram and of course, good quality ground meat, maybe 1/2 sausage and 1/2 beef...

I put in a package of dry onion soup mix and about 1/4 cup of breadcrumbs. Adds lots of flavour. And when you put it in the oven put about 1/2 cup of water over it, since the onion bits are dry, and cover with aluminum foil.

Hormone free hamburger, 1 box of stove top stuffing, 1 egg, and as much onion as you want chopped up. Mix, bake, and then pour on the ketchup!

Put strips of bacon across the top. It really doesn't matter what goes into it, the bacon takes precedence. Hold the red sauces.
