First, not all Tuna is Albacore. There are Yellowfin, bluefin and skipjack. Albacore is the whitest. The darker meat is from the more powerfull muscles like dark meat on a chicken and usually has a stronger flavor. I don't remember who makes the rules for labeling, Dept. of commerce, or agriculture. The lighter the meat the higher the price. I do believe that white meat tuna is always albacore but could have faulty memory on that one.

Albacore is a type of tuna, like yellowfin for example. Chunk light is actually from a part of the fish that is darker in color and chunk white is supposedly the prime cut of the tuna. Of the three, Albacore is considered to be the more desirable of the canned varieties.

first of all, all the canned tuna in stores is albacore, Chunk white is higher quality, hence the higher price, Its larger chunks of all white meat tuna, Were the chunk light has some of the darker meat from the tuna in there and overall much smaller peices. You should look around next time at the store and try the more expensive canned tuna you will most likely like it much better.
