When you go to the store and buy soy sauce, look on the label and check the sodium grams, it depends on the manufacturer.

Light soy sauce is saltier. Light meaning the colour, not how much sodium it has. You can buy reduced sodium light soy sauce.

Dark soy has a lot more sugar in it.

If it's made in the US, the dark will be saltier. If the lite requires refrigeration after opening and the same brand's dark does not, the dark is saltier.

You could always check the label for sodium content.

Dark or light has nothing to do with the salt content. It is just the color difference. Lite version has less salt. (read the labels)

Yes, there is "light" and "lite"....

To sum this up...
Dark or regular soy sauce = original
Light soy sauce = lighter in color
Lite soy sauce = less salt

Chinese variety Dark soy sauce uses molasses to darken the color and make it thick. Japanese ones do not contain anything other than traditional ingredients. Although they share common name and similar process, Chinese variety and Japanese variety have completely different taste. Be sure you know which one you are buying.

Also, keep in mind, between different manufacturers, there are significant difference in salt content.

Dark - Lite soy sauce is just that, lower in sodium. Use less in cooking, add at table if needed, add no salt to Chinese recipes, ever.
