Aside from hamburgers and brats on the grill, what is your favorite summer meal? I hate to turn the oven on in the summer, but looking for new ideas that my picky family will eat.

BEEF/CHICKEN/SHRIMP KABOBS DELUXE
1/2 c. vegetable oil
1/4 c. soy sauce
1/4 c. vinegar
1/2 tsp. pepper
2 lbs. sirloin tip roast cut into 2 inch cubes
2 lbs. chicken cut into cubes (slightly freeze it will make it easier to cut)
1 lb of shrimp (shelled and devained)
6 to 8 boiling onions
1/2 lb. fresh mushrooms
1 c. cherry tomatoes
1 lg. green pepper, cut into 1 inch pieces
Combine oil, soy sauce, vinegar and pepper in large shallow container. Add meat, cover and marinate in refrigerator 4 hours or overnight. Parboil onions 3 to 5 minutes; drain. Remove meat from marinade. Alternate meat and vegetables on skewers. Grill kabobs 5 minutes on each side over medium coals or until desired doneness, basting with marinade. If you use wooden skewers you should soak them in water before placing the veggies and meat. This will prevent them from catching on fire while grilling.

How about sandwiches on nice french bread? Sandwiches all the way, lettuce, tomatoes, onions, salt & pepper, oil & vinegar.. and what ever else you like.. Paired with a side of soup. This meal is very light, but due to the soup, it really fills you up. You could buy canned soups or make your own, for a more homemade, customized flavor. Homemade soups take a while to cook, but are not hard at all. Just chop up some fresh veggies, if you use red potatoes, you won't even have to peel them.. then add the meat of your choice.. seasoning.. and allow to simmer a couple hours. You could start the soup in the morning, leave it on low and forget about it. At dinner time, each family member could make their own sandwich to their likings, and the soup will be plenty done by then. Hope this helped!

I like Tabboulleh. Chicken, couscous, lime, mint, green onions, yum. If your family is picky, they probably won't eat it, but it is delicious.

Do they eat pasta salad? There are lots of ways to add protein to pasta salad that don't require the oven. Canned chicken or tuna are great.

Edit: LOL looks like everyone eats pasta salad in the summer. Cook some fish in a skillet with garlic, butter, and fresh herbs.

Well, my favorite is corn on the cob. Its delicious and its in season right now. And corn on the cob is always good with butter and a little salt. So dont forget to add a little extra flavor to it. Also, corn is good with pork or a grill, or baby back ribs. Or, you could have chicken with the corn and have mashed potatoes along the side so the kids can put both together. Mashed potatoes and chicken are always a favorite.

This is more of a dessert, its my fav. thing to have because its always too hot to eay cooked food, peaches, berries, bananas, and a creamy orange sauce combine summer's fruitiest flavors in a single fruit salad, just have:

Salad:
3 large peaches, peeled and cut into chunks
1 1/2 cups blueberries
1 1/2 cups sliced strawberries
2 bananas, sliced
3 teaspoons lemon juice

Orange-Yogurt Sauce:
1 cup vanilla nonfat or low-fat yogurt
2 tablespoons frozen orange juice concentrate


Combine fruit and lemon juice. In a small bowl, mix yogurt and concentrate. Put fruit in a large glass bowl or 6 small bowls or parfait glasses. Drizzle sauce over fruit and top with mint.

Drat! You took my favorite...BRATS on the grill. However, I use the crock pot more in hot weather. In the morning, I brown ground turkey and then put it in the crock pot with makings for chili or veggie soup and let it simmer all day. Good and easy at night with some cheese, crackers and fresh fruit.

A bean and corn salad, cold and filling!

BLACK BEAN AND CORN SALAD

INGREDIENTS

1/3 cup fresh lime juice
1/2 cup olive oil
1 clove garlic, minced
1 teaspoon salt
1/8 teaspoon ground cayenne pepper
2 (15 ounce) cans black beans, rinsed and drained
1 1/2 cups frozen corn kernels
1 avocado - peeled, pitted and diced (can be omitted)
1 red bell pepper, chopped
2 tomatoes, chopped
6 green onions, thinly sliced
1/2 cup chopped fresh cilantro (optional)

DIRECTIONS

Place lime juice, olive oil, garlic, salt, and cayenne pepper in a small jar. Cover with lid, and shake until ingredients are well mixed.

In a salad bowl, combine beans, corn, avocado, bell pepper, tomatoes, green onions, and cilantro. Shake lime dressing, and pour it over the salad.

Stir salad to coat vegetables and beans with dressing, and serve.

A good fish bake. Where I live people go Cat-fishing, but i like deep sea fish like Grouper, Macrial, Snapper. Clam bakes are also great. Jumbo Shrimp cocktail with grilled and seasoned Corn on the cobb/butter is a great plan.

- T-Bone Steaks (medium done)
- potatoes baked on the grill, wrapped in foil, and done long enough so the skin browns.
- Corn on the cob boiled in water on the stove with salt and Ms. Dash Table Blend sprinkled on them after.

You can't beat a salad or sandwich buffet. Put the stuff on the counter and let them have at it. If they do not like what they are eating, it is thier own fault.
