A friend has asked me to look on the 'net and I know I have seen the perfect recepie before somewhere but cannot find it now. It is not a vegan requirement. It is due to an egg allergy. Or any nice choci cakes without eggs. I have found a basic one but it is for a special occassion. Thank You....x

Here's one for a hot fudge cake that doesn't use eggs. It's very good.

Hot Fudge Cake
1 cup flour
3/4 cup sugar
6 tablespoons cocoa, divided
2 teaspoons baking powder
1/4 teaspoon salt
1/2 cup milk
2 tablespoons vegetable oil
1 teaspoon vanilla
1 cup brown sugar
1 3/4 cups hot water

Combine flour, sugar, 2 T cocoa, baking powder, and salt; stir in milk, oil, and vanilla until smooth. Spread in an ungreased 9" square pan. Combine brown sugar and remaining 4 T cocoa; sprinkle over batter.

Pour hot water over all; DO NOT STIR. Bake@ 350 for 35-40 min. Serve warm or cold with vanilla ice cream.

No Egg Wonder Cake

Ingredients:

* 1 3/4 cup sifted cake flour
* 1 cup sugar
* 1/4 cup cocoa
* 1 teaspoon baking soda
* 1/2 teaspoon salt
* 1/3 cup shortening
* 1 1/2 teaspoons vanilla extract
* 1 tablespoon vinegar
* 1 cup cold water

Preparation:
Sift dry ingredients together into a mixing bowl. Add remaining ingredients and beat until almost smooth. Pour into a greased and floured 9-inch square baking pan. Bake at 350° for about 30 minutes, or until a wooden pick or cake tester inserted in center comes out clean. Frost cake or serve with whipped topping.

ANOTHER OPTION:

You can make any cake from a box without using eggs or oil. Just add 1 cup of diet soda (Sprite or something similar for lighter colored cakes; Coke for darker colored cakes) to the mix and pour into the pan. Cook to the directions on the box. This is the most moist cake EVER... and it's healthier.

I don't have an entire recipe here but here's what you do:

Get any decent recipe. Substitute 1/4 cup water for each egg.

Go to your health foods store and buy Xanthan gum. This is a thickening agent that's pure vegetable matter. I think adding 1/4 teaspoon in the place of each egg would work, but you're going to have to experiment and find out--if the cake turns out too heavy, use less. This will fill in for the lecithin in the egg whites.

When you make the cake, the first step should be to cream the sugar and the fats. Do this step to excess--professional pastry chefs will turn on the mixer to cream these ingredients and then will go do the rest of their prep while the thing spins for half-an-hour. The more you cream, the lighter the cake will be.

Now, are you aware that confectioner's sugar as sold in most supermarkets is not vegan? Most manufacturers use bone meal to process their confectioner's sugar--if you're using regular granulated sugar it's likely not a problem, but make sure if it's powdered sugar that it's made using no animal products or you're not 100% vegan.

Quick and delicious chocolate cake to satisfy even your meanest cravings, this egg less cake will leave you wanting more.


1 1/2 cups all-purpose flour
1 cup brown sugar
1/4 cup unsweetened cocoa powder
1 teaspoon baking soda
1 teaspoon salt
1/3 cup vegetable oil
1 tablespoon vinegar
2 teaspoons vanilla extract
1 cup milk
1 cup semisweet chocolate chips



Preheat oven to 350 degrees F (175 degrees C). Grease and flour an 8 inch square pan. Combine the flour, brown sugar, cocoa powder, baking soda and salt in prepared pan. Mix well with a fork.

Make three "wells" in the dry ingredients. Pour oil in the first, vinegar in the second, and vanilla in the third. Pour milk over the top and mix all ingredients with a fork until well blended.
Pour chocolate chips over the top.

Bake in the preheated oven for 30 minutes, or until a toothpick inserted into the center of the cake comes out with moist crumbs. Cool in pan for 15 minutes, then cut and serve directly from the pan.

1 1/2 cups water
1 1/2 teaspoons vinegar

Preheat oven to 350 degrees.
In an UNgreased 9 x 13 pan- , sift all dry ingredients.
Add the liquids and stir just until blended.
Bake for 25 minutes.
Frost with your favorite frosting, cake is extremely moist so care must be taken that you don't tear up the top of the cake.
