Tonight I'll be having a fish fry with some friends. What should I include on the menu besides fried fish. I'm trying to stay away from frying the entire menu. (example: fried fish, fried potatoes, and hushpuppies) Thanks in advance!

Mac and cheese and some slaw is classic.

There is a dish called Plaa Rat Prik. It is thai. basically, you serve the fish whole with a sicy salad over it. IT is rediculously good. You could get a recipe easy enough

You have the Jerk already? Toast 3 tablespoons allspice berries, 3 crumbled bay leaves, 1 stick cinnamon, and 2 teaspoons black peppercorns in a dry pan until aromatic. Cool, then grind. Whisk together 1/2 cup malt or cider vinegar, 1/2 cup water, 1 or more Scotch bonnet or 2 jalapeño chiles (seeded and thinly sliced), and 1 bunch thinly sliced scallions. Stir in the spices. Tilapia massage the Jerk in, refidge for as long as you can wait, 3hour min. Myself, I like to fry it in a bit of hot oil 3min. a side untill the spice gets good and brown, stop drooling I'm not done. Got your salsa? OK here we go, Mango's 3, diced up small, schallot's 2 diced up, lemon 1 squeezed and zest for the bowl, you are putting all this in a bowl aren't you? cilantro chopped medium, 1/4tsp allspice,1/4tsp nutmeg, pinch ea.S&P. Someone get me a Tortilla I'm readyto eat. A side of chili beans would go great with this along with the spicy rice, stop me know or I'll get into dessert

baby red potatoes, boiled , drained and then tossed gently with sour cream and butter. Fresh corn is in the stores now,and so delicious.. but that is tricky because many people do not like to eat with their hands. A pan of mac and cheese is always a perfect partner for fried fish. The pan will be clean as a whistle after the meal!

Do you already have the recipe, you're just not sure when to add the salsa/jerk seasoning? I would use the jerk seasoning prior to cooking the fish, that way it will get a nice crust, and the juices will mix well with the spices. Salsa shouldn't be cooked with the fish, you want to keep it fresh. Top the fish with it when plating, or have it available in a dish, so everyone can add as much or as little as they like.

Instant potato flakes make a great puree, reconstitute it with water and oil until you get desired consistency then add turmeric, lemon pepper, and salt to taste!!! beautiful combination with the fish, you can also complete the dish with some roasted garlic green beans.

I like stewed tomatoes and mashed potato with fish that is fried in the pan. If I deep fry it I always have french fries and coleslaw. Yummy either way.

I like to serve millet. You will find it at international markets or health food stores in the US. Cook in a rice cooker and serve. It provides an interesting side dish instead of the usual items and will make a better impression at a special dinner.

*********PINTO BEAN CASSEROLE

1 package tortilla chips (9 ounces)
2 cans pinto beans, (15 ounces each) rinsed and drained
1 can (15 ounces) whole kernel corn, drained
1 can (14-1/2 ounces) diced tomatoes
1 can (8 ounces) tomato sauce
1 envelope taco seasoning
2 cups (8 ounces) shredded cheddar cheese

Shredded lettuce, sour cream and salsa, optional

Crush tortilla chips and sprinkle into a greases 13 X 9 X 2 baking dish. In a large bowl, combine the beans, corn, tomatoes, tomato sauce and taco seasoning. Pour over chips. Sprinkle with cheese.

Bake, uncovered, at 350 for 18-25 minutes or until heated through. Serve with lettuce, sour cream and salsa if desired.
KIDS LOVE THIS CASSEROLE WHEN YOU SERVE IT WITH TORTILLLA CHIPS. PLAN TO HAVE ISTANT PDDING FOR DESSERT AND YOU’LL HAVE ONE HAPPY FAMILY.

*******CORNBREAD SALAD

1 (16 ounce) package corn bread mix
10 slices bacon
1 (1 ounce) package ranch dressing mix
1 1/2 cups sour cream
1 1/2 cups mayonnaise
2 (15 ounce) cans pinto beans, drained
3 tomatoes, chopped
1 cup chopped green bell pepper
1 cup chopped green onion
2 cups shredded Cheddar cheese
2 (11 ounce) cans whole kernel corn, drained

DIRECTIONS
Prepare corn bread according to package directions. Cool, crumble, and set aside.
Place bacon in a large deep skillet. Cook over medium-high heat until evenly brown. Drain, crumble, and set aside.
Whisk together the dressing mix, sour cream, and mayonnaise.
Crumble half the corn bread in the bottom of a large serving dish. Top with half the beans. Layer the beans with half of the tomatoes, green bell pepper, and green onions. Sprinkle with half the cheese, corn, bacon, and the salad dressing mixture. Repeat the layers. Cover, and chill at least 2 hours before serving.
