Hi,
grilled fish is delicious.
Just follow a few rules:
if you are grilling whole fish, it is important to cut the fish at several places so it cooks evenly.
Clean the fish before grilling.
Cut tail and fins (they might smell when they burn);
add lemon and spices.
Before you start your fire, apply oil on the grill and on the grilling basket, if you are using one.
Apply oil on the fish or the fish pieces. Let them stand for a while and, before you start grilling, apply oil again.
Start grilling at high heat, turn the fish or pieces.
Grill other side on high heat , too.
Keep on going with less heat.
Turn often.
If you grill fish too long on one side, it might get dry.

Salmon or Tuna. Other oily fishes like swordfish and marlin are also good. Avoid dry fish like barracuda - even wrapped in foil it tends to get dry.
Another thing, when you're talking about coal, it's best to use wood for cooking fish on the barbecue, or at least to put some chippings in with your coals. For Mediterranean fish like tuna and swordfish, we like to use old grape vines. You can buy these commercially in Europe; I'm not sure about the U.S. I know in the U.S. there are several different kinds of wood, from hickory to pine, which is available for barbecue.

I'm not sure about the "best" fish - but I've done salmon with excellent results. Cod, swordfish and halibut are also good choices. Grilling demands a firmer fish as the delicate ones will fall apart in handling. Remember to use moderate heat and seal in foil to keep in the juices.

Tuna, Salmon. Any fish with fatty meat. Us a barbecue fish holder (looks like a diamond shaped screen the closes over the fish) to prevent it from sticking and falling apart.

Any firm fish at least 1 inch thick. Salmon, mahi-mahi, swordfish & halibut are good options. Be sure to brush the fish with some vegetable oil (not olive oil) & season lightly with salt & lemon pepper to keep the flavor fresh.
My husband is an avid fisherman & this is our family's favorite way to make fish (usually mahi-mahi that he catches).
