I just bought some in the market and there are no cooking instructions. Is it ok to microwave and if so for how long. It is only a small piece about a quarter pound

Simply poach it in either water or milk (or a bit of each!) witha bayleaf for not more than ten minutes. (Note - when I say poaching I mean with barely a bubble or two coming up! ! !)

When I was young, my mother used to make me smoked haddock in scrambled egg. Just mix up an egg with a little milk, salt and pepper, put it in a pan along with a dollop of butter and slowly poach. The fish will not take long to cook.

You could also try Kedgeree.

2 eggs
6oz long grain rice
8 oz smoked haddock
2 onions
1/4 pint fish stock
4oz butter
1 tsp curry powder
salt & pepper
2 bay leaves

1. boil eggs, shell and leave to go cold
2.cook the rice in a saucepan of slightly salted water for 12-15 mins. Drain and rinse under cold water.
3.Wash smoked haddock, place in a frying pan with parsley stalks, bay leaves and stock and chopped onion, and cook for ten mins until fish is cooked.
4.When the haddock is cool enough to handle discard the skin and bones and flake the flesh into large chunks.
5. melt the butter in a clean pan and finely chop the other onion then cook in the melted butter for 5 mins, add the curry powder and cook for a further 5 mins
6.Add the fish and rice and chunks of fish. Heat through until piping hot add the hard boiled eggs chopped into quarters.

Kedgeree is a delicious dish, ideal for an informal supper. brunch or as a starter.

Easiest way to cook your smoked haddock, is to pour some fresh milk into a pan, add a knob of butter, add the smoked haddock and slow cook for about 12 to 14 minutes.

You should then thicken the sauce, by adding some cornflour/cornstarch and when the sauce has thickened, it can be poured over the perfectly cooked smoked haddock.

This is the way we do it in SCOTLAND and it makes a most delicious meal.

Smoked haddock omelette Serves 2 Preparation time less than 30 mins Cooking time 10 to 30 mins Quick Recipe Ingredients 300ml/10floz milk 300ml/10fl oz water 3 bay leaves 2 slices onion 6 black peppercorns 275g/10oz undyed smoked haddock fillet 6 free range eggs 20g/3/4oz unsalted butter 50ml/1¼fl oz double cream 2 tbsp freshly grated parmesan cheese salt and freshly ground black pepper Method 1. Mix the milk with 300ml/10fl oz of water toghether, pour it into a large shallow pan and bring to the boil. 2. Add the bay leaves, onion slices and peppercorns and bring back to the boil. 3. Add the smoked haddock and simmer gently and poach for about 3-4 minutes, until the fish is cooked. Lift the fish out on to a plate and leave until cool, then break into flakes, discarding any skin and bones. 4. Pre-heat the grill to high. 5. Whisk the eggs together with some seasoning. 6. Heat a 23-25cm/9-10 inch non-stick frying pan over a medium heat, then add the butter and swirl it around to coat the base and sides of the pan. 7. Pour in the eggs and, as they start to set, drag the back of a fork over the base of the pan, lifting up little folds of egg to allow the uncooked egg to run underneath. 8. When the omelette is set underneath but still very moist on top, sprinkle over the flaked smoked haddock. 9. Pour the cream on top, sprinkle with parmesan cheese and put the omelette under the hot grill until lightly golden brown. 10. Slide it on to a warmed plate and serve with a crisp green salad.

hello well cooking fish in the micro is a no go u spoil the fish just way to much, haddock is beautiful if u place it in an oven tray, season a little oil and place in the oven at about 160 to 180 and cook with the skin side down, cook for about 6 min. haddock is so well served with mash potato with a few peas thrown in and a mild creamy mustard sauce. mash can be done in the micro if u want to but the sauce no, heat up some whipping cream once boiling work quickly add in any mustard u want but wholegrain is best. once the cream starts to thicken its ready to use when u want to. try this and let me know.







P_Rick>>>>> Are you crazy....Just because the haddock is smoked does not mean it is cooked. Advise like that could seriously harm people who read this and think it is true. Uncooked fish can be really harmful so you would HAVE to cook it.

Place the fish, on an appropriate plate for the micro, flesh side down add two tablespoons of tapwater. Cover in clingfilm. Put into microwave.
Set microwave on high at 4 minutes.
Remove from micro. Let stand for a minute. Pierce clingfilm and drain excess water. Remove clingfilm, turn fish over onto another plate add your vegetables.

put it in a dish with a drop of milk and cook for 5 Min's on high.
or you could make a nice fish pie cook and flake
the fish then ad egg and par sly sauce top wish mash potato and cheese then bake in the oven till cheese melts mmmm.
