It is severe summer, I feel like having some cold stuff. Ripen bananas? Not so cool. I keep them in deep freezer, supposedly for 10 minutes. I take some time before i open the freeze the second time. Wonder stroke, The bananas are solid Black.

What happened to them?
Are there any metabolic secrets available to answer it?

Anyway there was no problem with the lassi?

BANANA SALAD FREEZE

2 ripe bananas
3/4 c. sugar
2 tbsp. maraschino cherries, chopped
1/2 c. chopped nuts
1 (8 oz.) can crushed pineapple, drained
2 tbsp. lemon juice
2 c. commercial sour cream

Mash bananas gently with a fork. Blend in other ingredients. Stir well. Pour into tray or salad mold. Freeze.

BANANA FREEZE

1 (4 serving size) env. reg. low calorie vanilla pudding mix
1/4 tsp. almond extract
2 sm. fully ripe bananas, mashed
2 stiff beaten egg whites
5 maraschino cherries, halved

Prepare pudding mix according to package directions. Stir in extract. Cover surface of pudding with waxed paper; cool to room temperature. Fold in bananas and egg whites. Spoon into 10 paper bake cups in muffin pans. Freeze firm. Let stand at room temperature 30 minutes before serving. To serve; trim with cherries. Makes 10 servings. One serving (1/3 cup), equals: 1/2 bread exchange, 1/2 fruit exchange


BANANA LIME FREEZE

3 med. bananas
1/4 c. hot water
3 tbsp. lime juice
1/4 c. light corn syrup
1 egg white

In blender puree bananas. Add the remaining ingredients and blend until mixed. Pour into a metal loaf pan and freeze until hard. Remove from pan and beat with a mixer until smooth and fluffy.
Refreeze until ready to serve. Soften slightly in refrigerator before scooping into serving dish. Serves 4, about 150 calories per serving.

Keep the bananas in a cool dry place. I keep bread under the bedroom wardrobe, because it is in a north facing room, and the bread stays cooler than in the kitchen. Bananas could be kept cool the same way.

Did you freeze them with the peel? Try taking it off, and put the bananas in a zip lock bag. I have never had a banana turn black that way.

Also, I know you can roll a banana in melted chocolate and nuts and freeze it that way.

Its amazeing how some Countries are suffering from severe heat and sun and some are being washed away..pity we cannot swap our climates for a while.. And to answer your question I dont think you can freeze banannas..
