put the youks in a bowl and mash them with a fork
get them moist with a little bit of vinegar a tablespoon or so.
mix some mayo, a dab of mustard, a bit of sugar, salt and pepper together and then mix with the yolks with the vinegar.
add some pickle relish if you like that.

Savory deviled eggs
12- hard-cooked eggs, peeled
1/2 c. light mayonnaise (or regular mayonnaise)
1 tbsp. honey mustard
1/4 tsp. black pepper
1/2 c. large pimiento-stuffed olives (about 8), chopped
parsley for garnish
1. Cut eggs in half lengthwise and spoon yolks into a bowl. Reserve whites. Mash yolks with a fork. Stir in mayonnaise, honey mustard and black pepper.
2. Reserve 1 tbsp. of the chopped olives. Fold remaining chopped olives into yolk mixture.
3. Fill whites with the yolk mixture. Sprinkle reserved chopped olives over the tops of the eggs. Refrigerate for at least one hour.
Variation: Prepare filling, omitting olives. Instead, stir in 4 strips cooked, crumbled bacon and 2 tablespoons of shredded cheddar cheese.

SPOON egg yolk mixture evenly into egg whites; sprinkle with reserved mashed yolk or paprika.

First of all - peel them while they are hot!! Just put the pan in the sink and run cold water over them enough to cool them so you can crack them all over - a lot! Then the peeling will come off them almost in one piece and leave a perfect egg!
Now, for the best filling you ever tasted, use real mayonnaise and a tiny bit of mustard, and a couple teaspoons of sugar. Salt and white pepper. Perfect!

After boiling the eggs, cut them in half & take the yoke out. Mash the yokes & mix in mayo, mustard, Season All, & pickle relish with chopped ham. Very yummy!
