None. All the fields are difficult courses of study. The one that will be the easiest for you is the one you enjoy the most.

But unless you want to do research or teach at a university, a PhD in engineering can be very limiting since people will be looking for an absolute expert in a very small area.

Well, it might be clearer to say least hard rather than easiest.
As "astatine" said, picking a field you are passionate about will make things easier, for example, if after spending twelve hours in the library, you are thinking "that was great I learned so much cool stuff, I can't wait to come back tomorrow" you will find getting an advanced degree far easier than if you find yourself thinking "that really sucked, I need to go get drunk"

If you want to go for a PhD, that subject is your life - go for something that you passion for, and not what is simple.
