The recipe for my chicken tortilla soup calls for white pepper but I do not have time to go to the store. Is black pepper okay?

Can you explain how it changes the taste?

Why not subsitute the white pepper with a smaller amount of cayenne pepper. You would still have the spiceness of the white pepper.
If you don;t have cayenne pepper on hand, than I would use the black pepper.

White pepper has a slightly sweeter taste when compared to black pepper, but mostly it is used as and aesthetic: how good will your soup look with black dots floating around it?

When you are doing a cream based sour like leek soup or Vichyssoise, white pepper is usually used so the soup is completely white.

Howdy from Texas. This is the REAL King Ranch Chicken. And sooooo easy. 1/4 cup margarine 1 med green bell pepper chopped 1 med onion chopped 1 can (10 3/4 oz) cream of mushroom soup 1 can (10 3/4 oz) cream of chicken soup 1 can (10 oz) Ro-tel tomatoes 2 cups cubed chicken 12 corn tortillas, torn into bite size pieces (you can use up to 18) 2 cups (8 oz) shredded cheddar cheese In a large saucepan, cook pepper and onion in melted margarine until tender. About 5 minutes. Add soups, ro-tel and chicken, stir. Put in a 13X9X2 baking dish alternately layering tortillas, mixture and cheese repeating for 3 layers ending with cheese. Bake 40 min until hot and bubbling. Serves 8.

It doesn't change the taste. If the soup is white, then you will see the flecks of black pepper in there. They suggest using white pepper so you can't see it.
Personally, I like the contrast of the black flecks. Enjoy the soup.

Hope this helps and have a great day/night!!!

Yes, black pepper is stronger than white pepper.
Also you generally add the white pepper to a cream or light colored soup. If you don't mind seeing it then use it to taste.

No. The reason that white pepper is used is that no one wants to see black specks in a white soup or sauce and that is the only reason.
A dried peppercorn has a black outside that covers a basiclly white inside .Remove the outside covering and the result is white pepper.

Only a slight difference in spice taste. Nothing to worry about. Generally white pepper is used so as not to have black specks in a white sauce.

white pepper is way spicier than black pepper. But i don't find that there is a major taste difference. Although cracked black pepper does taste a little better.

The black pepper is a little stronger and a little hotter, you can use black pepper but I would use less.
