Ok i tried to make pancakes over a million times but they always turn out a reck!
how do u make pancakes??

This is if you want to make pancakes from scratch. You can also use the same cooking method for instant mixes like Bisquik.

6 cups all-purpose flour
1 1/2 teaspoons baking soda (check expiration date first)
3 teaspoons baking powder
1 tablespoon kosher salt
2 tablespoons sugar

Combine all of the ingredients in a lidded container. Shake to mix.
Use the mix within 3 months.


"INSTANT" PANCAKES:
2 eggs, separated
2 cups buttermilk
4 tablespoons melted butter
2 cups "Instant" Pancake Mix, recipe above
1 stick butter, for greasing the pan
2 cups fresh fruit such as blueberries, if desired

Heat an electric griddle or frying pan to 350 degrees F. Heat oven to 200 degrees F.
Whisk together the egg whites and the buttermilk in a small bowl. In another bowl, whisk the egg yolks with the melted butter.

Combine the buttermilk mixture with the egg yolk mixture in a large mixing bowl and whisk together until thoroughly combined. Pour the liquid ingredients on top of the pancake mix. Using a whisk, mix the batter just enough to bring it together. Don't try to work all the lumps out.

Check to see that the griddle is hot by placing a few drops of water onto to the griddle. The griddle is ready if the water dances across the surface.

Lightly butter the griddle. Wipe off thoroughly with a paper towel. (No butter should be visible.)

Gently ladle the pancake batter onto the griddle and sprinkle on fruit if desired. When bubbles begin to set around the edges of the pancake and the griddle-side of the cake is golden, gently flip the pancakes. Continue to cook 2 to 3 minutes or until the pancake is set.

Serve immediately or remove to a towel-lined baking sheet and cover with a towel. Hold in a warm place for 20 to 30 minutes.

Yield: 12 pancakes

Assuming you are making the batter correctly the next thing to go wrong is the heat of the griddle. It has to be medium hot. To make sure the griddle is hot enough use the water test. Sprinkle a drop or two of water on the griddle and when it is hot enough the water will dance across the griddle. Also the griddle has to be pre-seasoned and clean. Assuming the griddle is seasoned, spay it with Pam before you do the first pancakes. After the first ones you need not spray again.

i use the aunt jemima ready mix the one where you only have to add water and the thing about pancakes is to NOT overmix the batter at all because then your left with a tough rubbery pancake.just mix until all ingredients are combined and then you add a little butter to the griddle which should be medium heat and add about 1/2 cup of batter to make the pancake then let it bubble or check the bottom to make sure they are not burnt.you should only flip once

Follow this easy recipe and don't over mix your batter!!

BASIC PANCAKES
Ingredients:

2 cups flour
3 tsp baking powder
1/2 tsp salt (very important)
1/4 cup sugar
2 eggs (or equivalent egg beaters)
2 tbsp oil
1 cup milk

Instructions:
-------------
Sift dry ingredients in bowl and stir in liquid ingredients
with wire whisk or spoon until mixed. Do not beat. Rub griddle or frypan with oil. Heat until water dropped from your hand bounces around.

Drop about 1/2 ladel or 1 large mixing spoon for each pancake. Cook until bubbled all over the top and brown on bottom. Flip, cook until brown on
other side. Keep you griddle very hot at all times.

Variations:
-----------
1. Substitute 1 cup whole wheat flour for white flour.

2. Substitute buttermilk for whole milk and 1 tsp baking SODA for 1/2
tsp baking powder.

3. Put some pecan or walnut pieces in with your dry ingredients (this
keeps them from sinking). Or put in some blueberries .. also with dry
ingredients.

4. Increase your eggs. This will make them a little more like a crepe.
Top with sliced apples, brown sugar and cinnamon and fold in half.

Well Im sure you know how to make the batter. When its on the skillet bubbles will form, when the bubbles all pop thats when you flip it. I used to try and make them.. Ugh a gooey nasty mess. Ha they I tried to cover it with butter and maple syrup. NO WAY still nasty. But I promise, once all the bubbles pop, its time to flip.

You pour the batter in and wait to you see bubbles then you flip it.
