Shepherd's Pie Recipe
A traditional shepherd's pie is made with lamb, but feel free to use beef and beef gravy in this recipe.
INGREDIENTS:
* 2 cups cooked chopped leftover roast lamb
* 1 tablespoon finely chopped onion
* 2 cups lamb gravy
* salt and pepper
* 2 cups mashed potato, prepared with milk and seasonings as desired
* salt and pepper
* 1/8 teaspoon paprika
* 1 tablespoon butter
PREPARATION:
Combine meat, gravy, and chopped onion; season with salt and pepper to taste. Line the bottom of a buttered baking dish with a layer of half of the seasoned mashed potatoes. Add meat mixture then cover with remaining mashed potatoes. Or, meat and gravy can be put in the baking dish first then topped with all of the mashed potatoes. Dot mashed potato topping with butter, sprinkle with salt, pepper, and paprika, then bake for about 30 minutes at 400°, or until potato topping is browned and the Shepherd's pie is thoroughly heated.
This shepherd's pie recipe serves 4.

My mom's was slightly nontraditional, but what she did was:
Take leftover meat (ham, steak, whatever) and cut it into bite-sized pieces. Make a matching gravy (chicken, pork, beef), and place the meat in the bottom of a baking pan, pouring the gravy over it. Top with green beans (or peas if she didn't have beans), then top that with mashed potatoes, sealing the edges. Sprinkle with a little paprika and bake at 350 for about an hour.
If she didn't have leftover meat, she'd brown up some ground beef and use that instead.
Loads of work, but DELISH!

Poor Man's Shepard Pie
1 lb ground beef
6 large potatoes
2 (14 ounce) cans green beans
1 small onion
1 cup cheddar cheese (can be substituted with Colby Jack)
1 tablespoon milk
1 tablespoon butter
salt
pepper
Peel and boil potatoes until soft. Mash potatoes in a mixer. Add milk and butter. salt and pepper to taste.
Brown ground beef and onion in medium to large frying pan. Drain grease.
Heat green beans.
Spread ground beef evenly in pan.
Cover ground beef with green beans.
Spoon mashed potato onto the green beans and spread until they are completely covered.
Bake @ 350 until cheese melts
Serve and enjoy!
p/s: I normally use frozen mix vegs as a substitute

i take a pound or two of ground beef. sometimes toss in other ground meat- lamb turkey etc...
season and brown it... drain off the fat.
top with 2 cans of corn or other canned veggie.
top that with mashed taters, i use instant when in a hurry
sprinkle a lil grated cheddar on it and cover with a lid and heat thru. you could put it in a baking dish and pop it in the oven to brown the taters if you want
i serve it with catsup or a lil brown gravy.
yummmy- i do it the same as mom has for 30 years!
