Tell the instructor you want to learn a basic foxtrot and a basic waltz, each with an outside turn. These will cover you for almost any ballad that you would want to dance to.
Here's the key: don't try to learn too much. The basic step and the outside turn will take you one or two lessons, max. The basic step and turn looks lovely repeated over and over, rotating as you move around the dance floor. I wouldn't even attempt to learn steps beyond this. You will look better if you do the basic step, but perfect the details like standing up straight, elegant arm and shoulder position, keeping your eyes up (not looking at your feet!) -- rather than try to learn and remember trickier, complicated steps and turns. It's less to forget, and your guests will think you guys look great dancing together.

I wouldn't worry about learning all sorts of new dances. You won't have a lot of time for dancing anyway with all the mingling and cake cutting :)
Having a nice dance for your "first" dance is a great idea, though. A traditional waltz is very classy and easy to learn. "Time in a Bottle" by Jim Croce is a beautiful first dance song that just so happens to be a waltz (1-2-3, 1-2-3...)
Once you get the basics down, you'll be able to dance to just about anything, even if you don't know the specific steps. Its all about learning how to pick out beats and how music flows.

Ballroom is great and pretty universal.
My fiance and I started dance lessons, we picked out our song and the dance teacher/choreographer thought it would work well as a Foxtrot.
Most dance studios and teachers would be happy to discuss what dance classes might be right for you. If you know of a song you want to dance to or the type of music you'd like for your wedding, they could help you figure out what style of dance would be appropriate and you can select your class accordingly.

I think the Salsa is fun. But I did see on tv a wedding whose whole wedding party danced the thriller skit. I personally just wanted to do a slow dance and hold my husband forever when I got married.

If you want to see dances before picking one, I suggest watching, 'So You Think You Can Dance', 'Dancing With The Stars', or a movie that has to do with dancing. Its not about what everyone wants to see but you feel comfortable performing, especially in front of ppl. If you and your fiance have no dance experience I wouldn't choose something real difficult, even w/ an instructor

I think you should ballroom dance, like hardcore ballroom dancing. In a hot ballroom dancer outfit (if you're comfortable with your body and revealing skin), but if not just do the same 'ol boring dance that everyone else does.
