Kahlúa Bundt Cake
2 (18.25-ounce) packages yellow cake mix with double pudding
3/4 cup Kahlúa
1/4 cup Creme de Cacao
1 cup evaporated milk
6 large eggs
2/3 cup vegetable oil
Sweetened whipped cream for accompaniment (optional)
Preheat oven to 350*F (175*C). Generously spray Bundt pan(s) with cooking spray
Mix all ingredients on high for 3 to 4 minutes in a standing mixer, 5 to 6 minutes if hand held; until the mixture is extremely creamy and smooth and lightens in color.
Pour into pan(s) and bake until sides of cake are pulling away from the pan, about 39 to 43 minutes. The crust will seem dark, but that is normal. Take out and cool before inverting on to a plate. Dust with powdered sugar or glaze with the following; it makes a moister-pudding like texture when glazed.
With a wooden pick, poke holes all over the inverted cake then drizzle the following over the cake: 3/4 cup powdered sugar mixed with enough Kahlúa and water (even parts) to make a thin glaze..
Serve by itself or with a dollop of whipped cream.
Makes two smaller or one large Bundt cake (Serves 10 to 16, depending on pan sizes).
Liquor combination substitutions: 3/4 cup rum plus 1/4 cup orange Frangelico; or 3/4 cup Irish Creme with either 1/4 cup Creme de Cacao or Creme de Menthe.]

Bailey's Irish Cream Bars
For Cake-
1 package yellow cake mix
3 eggs
2/3 cup Bailey's Irish Cream
1/3 cup oil
For Swirl-
1 can cream cheese frosting
1 package white chocolate chips
1/4 cup Bailey's Irish Cream
Preheat oven to 350. Prepare a jelly roll pan (15-inch x 10-inch x 1-inch). (Please note that it is very important to use a large enough pan!) Mix cake mix with eggs, Irish Cream and oil. Set aside 1/2 cup of prepared cake batter for swirl. Pour cake batter into prepared pan.
In a small bowl, blend all swirl ingredients, including the 1/2 cup of reserved cake batter. Drop large spoonfuls of this mixture over the cake batter. Swirl with a fork to make a marble effect. Bake 25 - 30 minutes. (You may need to adjust the cooking time due to variations in oven temperatures. Check after 25-30 minutes and increase the cooking time if the center seems too soft. It should be soft but not overly mushy.) Cool and cut into squares.

Irish Cream Bundt Cake
Ingredients
1 cup chopped pecans
1 (18.25 ounce) package yellow cake mix
1 (3.4 ounce) package instant vanilla pudding mix
4 eggs
1/4 cup water
1/2 cup vegetable oil
3/4 cup Irish cream liqueur
1/2 cup butter
1/4 cup water
1 cup white sugar
1/4 cup Irish cream liqueur
Directions
1. Preheat oven to 325 degrees F (165 degrees C). Grease and flour a
10 inch Bundt pan. Sprinkle chopped nuts evenly over botttom of pan.
2. In a large bowl, combine cake mix and pudding mix. Mix in eggs, 1/4
cup water, 1/2 cup oil and 3/4 cup Irish cream liqueur. Beat for 5
minutes at high speed. Pour batter over nuts in pan.
3. Bake in the preheated oven for 60 minutes, or until a toothpick
inserted into the cake comes out clean. Cool for 10 minutes in the
pan, then invert onto the serving dish. Prick top and sides of cake.
Spoon glaze over top and brush onto sides of cake. Allow to absorb
glaze repeat until all glaze is used up.
4. To make the glaze: In a saucepan, combine butter, 1/4 cup water and
1 cup sugar. Bring to a boil and continue boiling for 5 minutes,
stirring constantly. Remove from heat and stir in 1/4 cup Irish
cream.

1/3 cup butter, softened
2 1/4 cups icing sugar, sifted
2 tablespoons Kahlua
3 tablespoons instant coffee
1 tablespoon hot water
Baileys Cupcakes (24 cupcakes)
The Ingredients - Chocolate Cupcakes:
200 grams chocolate (61% cacao)
3 sticks butter
2-1/4 cups sugar
8 eggs
1-1/4 cup flour
1/4 cup cocoa powder, unsweetened
1-1/2 teaspoons baking powder
pinch of salt
The Steps:
Chop chocolate and transfer into a metal or glass bowl.
Add butter to the chocolate and place the bowl over a pan of simmering water. Stir until chocolate melts and butter is combined.
Remove from heat and stir in sugar. let mixture cool for 10 minutes.
Beat in an electric mixer for 3 minutes.
Add one egg at a time, mixing for 30 seconds between each
Sift the flour, cocoa powder, baking powder, and a pinch of salt into the mixture and mix until blended.
Scoop into cupcake cups and bake at 350 F for 25 minutes or until a toothpick comes out clean.
The Ingredients (Baileys Frosting):
1 cup (2 sticks) butter
4-5 cups powdered sugar, sifted
1/3 cup Baileys
The Steps:
Beat butter until creamy, scrape bowl.
Add 4 cups of sifted powdered sugar and Baileys, beat until combined.
Add more powdered sugar as needed to get piping consistency

Slice bananas length ways. Heat some butter in a pan,about 4 tablespoons for 3 bananas, add 2 tablespoons of brown sugar firmly packed and for the adults a splash of Kahlua.
Allow to heat up until the sugar starts to melt. Add bananas and turn up the heat. Cook until bananas are warmed through and sugar has dissolved. Serve immediately on their own or with cream. Drizzle a little of the excess sauce over the top.
Delicious.

IRISH MYSTERY CHICKEN
4 slices ham (luncheon)
4 whole chicken breasts, split, boned & skinned
1 can condensed cream of mushroom soup
1 c. sour cream
1/2 c. Irish mist or Kahlua
1 c. sliced mushrooms or more if desired
In an 8"x12" baking dish, arrange slices of ham on bottom, on each slice place 1 chicken breast, skinned side up. If large slices of ham, cut in half. Mix remaining ingredients and spoon over chicken covering completely. Bake in preheated oven for 1 hour at 350 degrees. Serve over wild rice.
KAHLUA BAKED EASTER HAM
10 lb. precooked ham
3/4 c. brown sugar
1/2 c. kahlua
3 tbsp. kahlua
2 tbsp. dry mustard
Whole cloves
Place ham with rind on rack in roasting pan, fat side up. Roast at 300 degrees, 18 minutes per pound. During last hour, trim rind, scorefat (criss cross) and stud with cloves. Sprinkle top with brown sugar, then 3 tablespoons kahlua. Pour 1/2 cup kahlua and mixed mustard into pan. Baste frequently with pan syrup. Delicious!

a quick easy dessert is a piece of fudge brownie, topped with a scoop of ice cream, drizzled with Kahlua. enjoy!
