Most commercial meat tenderizers are made from papian, an enzyme that occurs naturally in papaya. In Hawaii, when they have cook a though wild boar they puree papaya's with a bit of lemon juice and marinate it with spices. It works great.

It all depends on what you are cooking and the flavor you are going for. I like to marinate my meat in lime juice before I cook it, it seems to come out much more tender and juicy.

I usually add my spices, then rub the whole piece with olive oil before cooking it. It keeps in the flavor and juiciness.
