Fry some onion and garlic in a hot safe casserole pot
Add some courgette, aubergine, celery and carrots if you wish
In a separate pan quickly fry the chops just to seal them.
Add them to the main casserole pot
Add some tinned tomatoes, herbs and seasoning
Leave to cook and reduce for approx 25 minutes
Serve on a bed of rice garnished with watercress
You can also add some beans and pulses to the recipe half way through cooking if you like.

I like to brown the pork chops in butter with salt and pepper, remove them from pan, add 1 can Campbells Golden Mushroom soup and a couple of dashes of Worcestershire sauce. Heat till bubbly, add the pork chops and cook until done. YUM!!!!

go mexican - rub chile powder, some onion powder, and a little hot pepper. grill or bake it.
go french - melt butter in a stainless steel pan, add sage and saute for a little while. parcook both sides of the pork chops, then place the entire pan into the oven for 20 minutes. eat as-is or pull it out of the oven, remove the pork chops, add a little sherry, flour and a little cream on low heat. put the pork chops back - makes the most unbelievable dish.

before final cooking remove the chops let them drain keeping the juices off course, throw a few spoonfuls of honey onto the pan get nice and hot throw the chops back in with the juices, after a minute take the chops out throw in some fresh onions cook for about 20 seconds then serve over the chops.

Try this...sautee some garlic..add it to some heavy cream, salt and fresh ground pepper..pour it over pan seared pork chops! It's great with steamed rice or basmatti rice..
Marinate the chops in fresh rosemary garlic and salt b4 cooking..you'll love it.. for another variation, that sauce goes well specially if you dip the chops in egg and Panko (japanese bread crumbs) and fry it..yummy!

Pork is a very versatile meat. It is one of the top meat picks for most chefs due to this. What kind of sauce do you like; choose anything..I bet it will go very nicely with the pork chops.

Try it with peach.
Remove the stone, cut into quarters. Sprinkle some salt & sugar, melt some butter & grill in the pan next to the pork chops till the surfaces are carmelised.

Pork is very versatile- I like apples and onions with pork chops, in the fall, just feels more in season then.
In the summer, I like cajun pork chops with a veggie janbalaya. Season the pork chops with a cajun seasoning like Emeril's or Tony Chachere's cajun blends. ( just sprinkle on both sides) and pan fry or grill the chops.
Serve with veggie jambalaya, buiscuits, and beer!
Veggie Jambalaya
1 tablespoon vegetable oil
1 large onion, coarsely chopped (1 cup)
1 medium green bell pepper, coarsely chopped (1 cup)
2 garlic cloves, finely chopped
1 cup uncooked regular long-grain rice
1 can (14 ounces) vegetable broth
1 cup frozen whole kernel corn
2 tablespoons Worcestershire sauce
1/8 teaspoon ground red pepper (cayenne)
1 can (15 to 16 ounces) black-eyed peas, rinsed and drained
1 can (14 1/2 ounces) stewed tomatoes, undrained
1. Heat oil in 10-inch skillet over medium-high heat. Cook onion, bell pepper and garlic in oil 3 to 5 minutes, stirring occasionally, until vegetables are crisp-tender.
2. Stir in rice. Cook 2 to 3 minutes, stirring occasionally, until rice is light golden brown. Stir in broth. Heat to boiling; reduce heat. Cover and simmer 15 minutes
3. Stir in remaining ingredients. Cover and simmer 5 to 10 minutes or until vegetables and rice are tender.

With pork, Mango makes a great fruity change from boring apples..roast round meat for last twenty minutes, or, make a puree from lightly poached ones, no salt added though. I used Mango's as I lived in Uganda for many years where applaes do not grow. Give it a go. You will love it! Jacquie
