hi. i really want to make noodle kugel because i'm jewish and i heard it was delicous. i look at some recipes and i said i had to use EGG NOODLES, RASINS, and APPLES lately i'm short on theese and i'm not big fan of rasins:( Is it ok for me to make noodle kugel without the apples or the egg noodles. recipes would be good thx. 10 pts.

INGREDIENTS

* 1 pound egg noodles
* 1/2 cup butter or margarine, melted
* 8 eggs
* 2 cups sugar
* 2 cups sour cream
* 2 cups small curd cottage cheese
* TOPPING:
* 9 cinnamon graham crackers, crushed
* 3 tablespoons butter or margarine, melted

DIRECTIONS

1. Cook noodles according to package directions; drain. Toss with butter; set aside. In a large mixing bowl, beat the eggs, sugar, sour cream and cottage cheese until well blended. Stir in the noodles.
2. Transfer to a greased 13-in. x 9-in. x 2-in. baking dish. Combine the cracker crumbs and butter; sprinkle over top.
3. Bake, uncovered, at 350 degrees F for 50-55 minutes or until a thermometer reads 160 degrees F. Let stand for 10 minutes before cutting. Serve warm or cold.



this is a much better recipie then with raisins & apples

Yield: 8 servings

1/2 c Orange juice
8 oz Noodles, cooked and drained
1 tsp Lemon juice
1 can Apple pie filling
1/2 c Raisins
6 Egg whites
1 c Walnuts
3/4 c Sugar
1/2 Stick margarine, melted
TOPPING:

1/2 Stick margarine, melted
3/4 tsp Cinnamon
1 1/2 tbsp Sugar
1/2 c Walnuts
Mix noodles with margarine. Add eggs, sugar, apples, juices, nuts and raisins to noodles. Mix well. Top with melted margarine. Sprinkle mixture of sugar and cinnamon over top. Top with 1/2 c walnuts. Bake at 350 degrees, 1 hour in 9 x 13 pan.

NOTES: I used low fat margarine, "no- yolk" noodles, and I think you could cut back on the nuts. Also, I used Eggbeaters, because it was easier (equal to three eggs).

Potato-Apple Kugel
Serving Size : 4

To grate the onion, potatoes and apples, use the large perforations of a box grater or the large grating disk of a food processor.

3 Tbs. olive oil
1/4 cup grated onion
2 lb. baking potatoes, peeled and grated
2 Granny Smith apples, peeled, cored
and grated
2 eggs, lightly beaten
1 tsp. baking powder
Salt and freshly ground pepper, to taste
Sour cream for serving (optional)

Preheat an oven to 375°F. Oil a shallow 9-inch round baking dish or pie dish with 1 tsp. of the olive oil.

In a large bowl, combine the onion, potatoes, apples, eggs and 2 Tbs. of the oil and stir to mix. Sprinkle with the baking powder, season with salt and pepper, and mix thoroughly. Transfer the potato mixture to the prepared baking dish, spreading the mixture evenly. Drizzle with the remaining 2 tsp. oil.

Bake the kugel until the top and sides are golden brown, about 1 hour and 10 minutes. Serve hot or warm with sour cream on the side. Serves 4 to 6. Leslie Revsin, Chef and Cookbook Author, New York City.

Vegan Noodle Kugel

Ingredients:
8 oz. whole wheat or brown rice pasta, cooked according to package
12 oz. firm tofu
1c applesauce
2T barley malt
1 c rice dream
1 1/2 t vanilla
1 t cinnamon
1/2t nutmeg
1/4 t lemon zest
1 t salt
12 oz. super firm tofu
1 1/2 c raisins

Steps:
Preheat oven to 350° F. Oil 9" x 13" pan, no need to oil nonstick.
In food processor, whirl firm tofu until smooth. Add to the processor the remainder of the ingredients except the super firm tofu, raisins and pasta. Whirl until smooth. Add the super firm tofu and whirl until super firm tofu gets the texture of ricotta cheese.
Spread the pasta and raisins evenly in the prepared pan. Pour in the tofu mixture. Stir to mix and spread evenly.
Bake for 50 - 60 minutes until the top is brown and the center is firm.
Cool and cut into squares. Serve warm.

***This is a vegan recipe but it's without the items that your short on.***

Noodle Kugel


Prep Time: 15 min
Total Time: 1 hr 15 min

1 container (16 oz.) BREAKSTONE'S or KNUDSEN Low Fat Cottage Cheese

1 container (16 oz.) BREAKSTONE'S Sour Cream

1 cup sugar

5 eggs, beaten

1/2 cup (1 stick) margarine, melted

1 Tbsp. imitation vanilla

1 pkg. (12 oz.) broad egg noodles, cooked, rinsed and drained (Kosher for Passover)

1 Tbsp. cinnamon sugar


PREHEAT oven to 350°F. Mix all ingredients except noodles and cinnamon sugar until well blended. Stir in noodles.

SPOON into 13x9-inch baking dish; sprinkle with cinnamon sugar.

BAKE 50 minutes to 1 hour or until center is set. Cool at least 10 minutes before cutting to serve.

unthawed is frozen :) Are they noodles you made at home them froze? Then drop them in boiling water. Actually if you bought them I would also just drop them in boiling water. I would worry about them becomeing soggy if left out to thaw as anything that is froaen releases some water. Then the noodles would be sitting in the water and yeah you get the point.

It wouldn't be noodle kugel without the noodles. You can substitute pineapple or dried apricots for the apples and raisins.
