are you assigned a seat, or do you just pick your own?

In the UK, if you book in advance, you are assigned a 'reserved' seat. If you 'turn up and go', then you have to find your own (if there arre any unreserved)

On the majority of my train rides here in the US, I choose my own seat. Depending on the ticket, I may have access to a certain class of car (First class or Business class), but I can choose any seat I want in that car.

I don't take overnight train trips, so that might be a different story.

No, only if I book a reserved seat before the trip, then only get a choice of Facing / back, next to window or not.
