Stuffed large shells. Mix Ricotta cheese w/some basil or Italian seasoning & 2 eggs. (of course depends on how much you're making) This is for the large container of Ricotta & makes a 13 x 9 baking dish. Mix grated mozzorella or 4 cheese pizza mix in the Ricotta mixture. Fill cooked shells. Put a layer of your spaghetti sauce on the bottom & some on the top & also cover w/Mozzorella or the grated 4 cheese pizza mix. Cook until done at 350 for about an hr.

Lemon Basil Bowties


FOUR SERVINGS
Prep Time: 10 min
Cook Time: 20 min






1 pound bowtie or other short pasta
1/4 cup extra-virgin olive oil
3/4 cup pine nuts (about 4 ounces), toasted
1 1/2 cups cottage cheese or ricotta cheese
1/2 cup packed fresh basil leaves, chopped
Grated peel of 2 lemons
Salt







1. In a large pot of boiling salted water, cook the pasta until al dente; drain.
2. Transfer the pasta to a large serving bowl and toss with the olive oil. Add the toasted pine nuts, cottage cheese, basil and lemon peel and toss. Season to taste with salt.

ANGEL HAIR PASTA WITH BROCCOLI AND
THREE CHEESES

3 cloves garlic, crushed
2 tbsp. olive oil
1/2 onion, peeled and chopped
1/2 lb. broccoli
1/3 c. whipping cream
Salt and pepper to taste
1/2 lb. angel hair pasta
1/4 lb. Swiss cheese, grated
4 tbsp. Romano cheese, grated
3 tbsp. Parmesan cheese, grated

Saute the garlic in the oil until brown. Add onion and broccoli and saute until broccoli is barely tender. Add cream and pepper. Add salt, if desired.
In meantime, cook pasta in salted boiling water. Drain pasta, and toss with 3 cheeses. Add cream and vegetables, toss, and serve. Garnish with more cheese and parsley. Serves 3-4.

For a really easy one, boil some pasta and drain. Toss with pesto. Top with Parmesan/asiago/Romano, and some fresh ground pepper.

It's simple, but oh so good!

my favorite is chicken scampi..
try it at the olive garden if you ever go there...I have the recipe and will share it.
