I'm super lactose intolerant but I love pancakes. Can you substitute water for the milk without it being disgusting? (They aren't from scratch, just a package.) Thanks!

I'm the same as you, and don't like using the pills just for something like pancakes. I use water all the time. However, if they are from a package, read the ingredients - there may already be milk ingredients or whey powder in it, for example, already.

If you are using a mix and it only says to add water....WATCH OUT there is powdered milk in there.
Make your own and be sure. It's not that hard.
Try this recipe.

This is a great recipe for Southern applesauce pancakes and I adapted it. They called for milk as a liquid but I have used soy milk or apple juice and they turn out great.

I usually make the full batch and then freeze for later. That makes enough for two people, 2 different times. They freeze very well.If you put fruit in when they are cooking on the first side and then flip over when ready, they are really great. I like blueberries or raspberries. Mmmmmmmm......

INGREDIENTS:
1 cup wheat flour
1/4 teaspoon salt
1 1/2 teaspoons baking powder
1/2 cup soy milk or apple juice
1 beaten egg (or substitute)
1/2 teaspoon vanilla
1 1/4 cups applesauce
1 teaspoon cinnamon
PREPARATION:
Sift flour, salt and baking powder into a medium mixing bowl. Combine soy milk and egg. Stir into dry ingredients. Add vanilla, applesauce & cinnamon; beat well & let sit 5 minutes. Spoon batter into a hot, greased frying pan. (add fruit now)
When pancake edges are lightly browned, turn and cook on the other side.
Makes 6 -8 applesauce pancakes.

Non-Dairy Pancakes

For some wonderful and easy pancakes, prepare the night before:

1 1/3 c warm water
1 package yeast
5 tbs sugar
1 c white flour
1 c whole wheat flour
Wheat germ can be added for texture, flavor and nutrition.
You can add molasses for calcium and flavor. Sugar may be decreased if needed.

You can add more water until your batter is a nice "pancake mix" consistency. Put in the fridge. The next morning, melt 3 tbs non-dairy margarine, and mix it in to the batter. Cook and enjoy. These are especially good with powdered sugar!

Use soy milk instead. You can use it measure for measure in place of cows' milk. Most natural foods stores carry it, as does Whole Foods, Wild Oats, and probably most grocery stores.

You can also use almond milk and rice milk, but they're thinner than soy milk. They're probably akin to skim milk.
