Should I turn the stove off or leave it on low?

Or should I just stick it in the fridge and re-heat it for dinner????

Being out for 3 hours won't spoil it. You could always leave the stove on really low if you're overly concerned. I would just warm it back up prior to dinner. It will be fine.

Cool it as fast as possible, because the temperatures that bacteria grow are between 42 and 140˚F. I would put it in a container with a lid, leave the lid cracked so that steam can escape, then place it in the bottom of the fridge, near the back where it is coolest. Reheat it when you are ready for it. Leaving it on low only meddles up the flavors of the ingredients (sort of like overboiling veggies...they turn that army green colour).

Just leave the burner off until about 45 mins before you plan to seve it, Turn on low at that time. No need to refrigerate. Actually I think this will end up tasting better at 6 then it did at 3 p.m

Just leave it on the stove and turn the stove off.
If it cools off too much before you eat it, just reheat it.
If you leave the stove on the vegetables may get mushy.

keep it on the stove on low, stir every 20 min, it will help make the "juice" thicker, and help bring out the flavor, and you won't have to worry about reheating it and accidental "overheating" it. Or put it in you crock pot, till dinner, with the temp set at low!

Cover it... turn off the stove and just reheat it for dinner.

There are food safety rules, but realistically you should be fine. You're not constantly lifting the lid and ladeling stuff out. Also, you and your family are the only one's that are touching it. In food service, there are many hands (probably dirty) that touch food.

You must keep it hot to avoid food poisoning-either leave the heat on low or refrigerate and reheat.
