With my own Danes I've done:
Rally, Obedience, conformation, therapy work,hiking,camping, parades, demos
Other things you can do::
Tracking, agility,search/rescue

obedience trials, fly ball, agility trials, or Danes can be great therapy dogs to take to nursing homes and hospitals (need to be certified) but well worth the look on their faces

PLAY FETCH and gets some skates and go for a run
