Fresh Raspberry Muffins would be delicious!

2 1/4 C. flour
2 tsp. baking powder
1/4 tsp. salt
1 T sugar
1 egg, beaten
1 1/4 C. cold milk
1/4 C. oil
1 C. fresh raspberries

Preheat oven to 375 F.

Mix dry ingredients together in medium size bowl.

In a small bowl blend egg, milk, and butter. Add to the dry ingredients and mix just until lumpy.

Add raspberries, stirring gently. Do not overmix. Spoon into greased muffin tins.

Bake for 25-30 minutes. Makes 1 dozen.

Enjoy them while they're fresh! Just rinse them in cool water, then sprinkle a little sugar on them. Toss gently with a spoon and then let them sit for a little while to draw juice!

Or use them instead of strawberries with shortcake. Or serve them on vanilla ice cream.

If you're looking for something a little more creative, then make a Raspberry Roll-up: Bake a jelly roll sponge cake. After the rolled up cake is cool, spread it with Cool Whip and then put the washed raspberries on it. Sprinkle with some powdered sugar. Roll it up (Any berries that fall out of the roll are a treat for the Cook!) and put a little more Cool Whip on the outside. I always keep a few of the raspberries to put on the top of the Roll Up.

Raspberry Vinegar

2 to 2 1/2 c. raspberries, lightly crushed
2 Tbsp. sugar or honey
2 c. red wine vinegar

Combine ingredients in the top of a stainless steel double boiler. Place over boiling water. Turn heat down and cook over simmering water for 10 minutes. Pour mixture into a screw top jar
and let it set for three weeks. Strain the mixture to remove berries. If the mixture appears cloudy, strain it through a coffee filter. Pour it into sterilized bottles

RASPBERRY BELLINI

1 bag frozen unsweetened raspberries, thawed
2 tablespoons sugar
1 bottle (750-ml) chilled brut champagne

Blend the raspberries and sugar in a food processor or blender until pureed. Strain the raspberry puree through a sieve; discard the seeds, if you wish.
Set up 6 Champagne flutes and put about 1 tablespoon of raspberry puree in each glass.

Add Champagne to each glass; stir gently and serve.

The Best Chocolate Raspberry Pie

1 unbaked pastry shell -- (9 inch) 3 tablespoons sugar 1 tablespoon cornstarch 2 cups fresh or frozen unsweetened raspberries -- thawed FILLING 1 8 ounce pkg. cream cheese -- softened 1/3 cup sugar 1/2 teaspoon vanilla extract 1/2 cup whipping cream -- whipped TOPPING 2 squares semisweet chocolate -- (1 ounce each) 3 tablespoons butter or margarine

Line unpricked pastry shell with a double thickness of heavy-duty foil. Bake at 450 degrees for 8 minutes. Remove foil. Bake 5 minutes longer. Cool on a wire rack. In a saucepan, combine sugar and cornstarch. Stir in the raspberries; bring to a boil over Medium heat. Boil and stir for 2 minutes. Remove from the heat; cool for 15 minutes. Spread into shell; refrigerate. In a mixing bowl, bet cream cheese, sugar and vanilla until fluffy. Fold in whipped cream. Carefully spread over raspberry layer. Cover and refrigerate for a least 1 hour. Melt chocolate and butter; cool for 4-5 minutes. Pour over filling. Cover and chill for at least 2 hours. Store in the refrigerator.

Enjoy your pie with a glass of champagne with a few of those raspberries thrown into the glass!

Make a LARGE meringue fill it with whipped cream add the raspberries on top and sprinkle with Castor sugar.

Either pour a half pint of half and half cream over them, and add sugar, or put them on some plain vanilla ice cream!
